Beef Noodles is an iconic staple of the Taiwanese menu. Yet, beef was not even widely eaten on the island barely 70 years ago.
As a chef who cut his teeth making to-go beef noodle packs, Eric takes on the challenge to uncover how cows have re-defined the way Taiwanese eat.
His journey takes him from New York to Taiwan where he discovers the dish’s broth swirls with unspoken stories from the island’s recent history.

I gotta give eric mad props; no disrespect but this series is way better than munchies or vice or bon appetit and really shows his thinking, interests and culture - so impressive the thirst for knowledge and history, and really showcasing Taiwanese history, cuisine as well as the purveyors, producers and inhabitants of the island - and yes, his mandarin is as good as his english :)

if chef eric was born and raised in taiwan til he was 18, how does he not speak with an accent? did he go to an american school in taiwan? everyone i know who came to the US after middle school has an accent when they speak english.
