Savory Cabbage Rolls Pies! Quick and Simple! These rolls pies are a delicious and easy way to enjoy the classic combination of cabbage and mushrooms. They are made with a simple oil-based dough that is soft and flaky, and a savory filling of sautéed onions, mushrooms, and sauerkraut. They are baked until golden and crisp, and served warm with sour cream or your favorite sauce. They make a great snack, appetizer, or main course for any occasion.
Ingredients:
• For the dough:
o 330-360 g (2 3/4 - 3 cups) all-purpose flour, plus more for dusting
o 0,5 tsp. salt
o 120 ml (1/2 cup) vegetable oil
o 125 ml (1/2 cup) warm water
• For the filling:
o frying oil
o 2 medium onions, peeled and sliced into half rings
o 300 g (10 oz) mushrooms, cleaned and chopped into small pieces
o 150 g (5 oz) sauerkraut, drained and squeezed of excess liquid
o 0,5 tsp. salt
o freshly ground black pepper, to taste
• For the glaze:
o 1 egg yolk
o 1 tsp. sour cream
Prepare the stuffing:
Cut the onions into half rings and the mushrooms into cubes.
Lightly fry the onions in vegetable oil until translucent.
Add mushrooms to the onions and stew for 3-5 minutes.
Introduce sauerkraut, squeezed from excess liquid. Stew a little more.
Season with salt and freshly ground black pepper. Stir and stew for an additional 5 minutes. Remove from heat and let the stuffing cool down.
Prepare the dough:
In a bowl, combine flour, salt, vegetable oil, and warm water.
Knead a soft, elastic dough, adding flour as needed.
Divide the dough into 10 parts, rolling each into a ball.
Roll out each dough ball into a thin rectangle.
Spoon the cooled stuffing onto one edge and roll it up. Repeat for all pieces.
Place the rolls on a baking tray lined with parchment paper.
Brush with a mixture of beaten egg yolk and sour cream.
Bake at 200°C (392°F) for 20-25 minutes until golden.
Remove from the oven, let cool slightly, and serve these delightful cabbage rolls pies while they're warm.
