Savory "Build-Your-Own" Takoyaki Recipe- Forget Octopus!

▼Takoyaki Recipe
Ingredients (25 Large Balls)
- 1 cup(250ml) All Purpose Flour
- 1tbsp Potato Starch (1.5 tbsp Corn Starch)
- 2 Eggs
- 2 cups(500ml) Water
- 2 tsp (6g) Dashi Powder (Chicken Broth)
- 1 tbsp Soy Sauce
- 1/4 of a Cabbage
- A bunch of Green Onions
- Fried Wheat Flour (Optional)
- Otafuku Okonomi Sauce (Takoyaki Sauce)
- Fillings (Anything you like): Octopus, Shrimp, Shredded Cheese, Green Beans, Kimchi
- Toppings (optional): Mayonnaise, Aonori Seaweed Flakes, Bonito Flakes
Steps
1. Make the Batter
In a large mixing bowl, combine the all-purpose flour and potato starch (or cornstarch). Add eggs, water, dashi powder, and soy sauce.
2. Prepare the Vegetables and Fillings
Finely chop the cabbage and green onions. Prepare your preferred fillings by cutting them into small, bite-sized pieces.
3. Heat the Takoyaki Pan
Preheat the takoyaki pan over medium heat. Once hot, generously oil each hole with a brush or paper towel.
4. Fill the Holes
Pour the batter into each hole, filling them about 2/3 of the way. Add cabbage, Fried Wheat Flour, green onions and your chosen fillings into each hole, then top with a little more batter to cover the fillings.
5. Cook and Flip the Takoyaki
Once the edges start to set, use a takoyaki pick or skewer to gently turn each ball 90 degrees. Allow the uncooked batter to flow out, then continue rotating the balls until they become round and golden brown on all sides.
6. Add Toppings and Serve
Once fully cooked, drizzle with Otafuku Okonomi Sauce (Takoyaki sauce) and mayonnaise. Sprinkle with Aonori seaweed flakes and bonito flakes.
▼Today's Umami Tips
- Don’t forget to put Dashi Powder (Dashi Stock)! If you don’t have one, you can use Chicken Broth instead.
- Please use a combination of bonito and kelp dashi if you can. When bonito (inosinic acid) and kelp (glutamic acid) are combined, the umami becomes 7 times stronger. (Hondashi only uses bonito.)
- You can put anything you like in Takoyaki! I recommend cheese and kimchi!
