Soap is a man made detergent. Soaps are of two types . Hard soap is a sodium salt of fatty acids and it is used for washing clothes .In this experiment NaOH solution ,coconut oil and salt solution are mixed and boiled. The chemical reaction takes place and soap is formed .This is preparation of washing soap in laboratory.

Was it necessary to add the NaOH and oil mixture in NaCl solution? Because I saw another video in which they didn't mixed the solution with salt solution at the end and still got a much better soap

Because soap is insoluble in nacl+water (brine solution). So when it is added soap Precipitates out as solid.

You need heat to break oil up into carbon hydroxide molecules. Can't do without fire.
