This super easy dish is a really common dish all over China. I always think that tomato and egg love each other. I can tell by how good they taste together. Simply serve this with white rice. It will warm you up, make you feel so good to be home. And it is so simple for beginners why not give it a try?

Ingredients
- 3 eggs
- 3 mediums size tomatoes
- 2 - 3 tbsp of vegetable oil
- 1 tsp of sugar
- 1/2 tsp of salt
- 2 tbsp of diced scallion
- a little touch of vinegar if you like
Instruction
- First, peel the tomatoes. Use a sharp knife to slightly make a cross on the skin. Put it into boiling water for 20 seconds or more until you will see part of the tomato skin is coming off. Then put it into ice water. Carefully peel it. Or you can just ship this leave the skin on which I always do that when I am lazy.
- Cut the tomatoes into chunks.
- Crack 3 eggs, scramble it.
- Turn the gas to the maximum. Heat up the wok for 10-15 seconds. Add 3 tbsp of oil. This dish is very healthy so I don’t mind that much oil but if you don’t like it, you can cut it down. Wait until you see there is smoke coming out. Add the egg. 30 seconds later, the egg should be really fluffy. You can break it into small pieces now. Take it out and set it aside.
- Put the tomatoes in the same wok, along with 1 tsp of sugar and 1/2 tsp of salt. The salt can bring out the tomato juice. It is a very simple dish. Some people like it to be a little bit sour, so they add more vinegar. If you like you can do that too.
- Turn the heat to medium. Cover it, let it cook. How long does it need to be cooked? Totally up to you. Some people like the hard texture, some people prefer ketchup texture. This is what I like. There is tomato juice but also the tomatoes still have the hard shape. Once you think it is good, add the egg. Stir it until well combined.
- Add some spring onion at the end. You are done. Serve it with white rice.

I cook this just now. But i add additional ingredients... I put 1 clove of minced garlic and a chopped white onions before i put the boiled chopped tomatoes and egg. Its delicious. I love this recipe. Another awesome recipe i learned from you. Thank You so much!

If I have home grown tomatoes from my garden I add some diced to my Tex-mex omelettes but this is even simpler than a omelette. Great idea for breakfast or supper.

THE #1 dish for a solo, backpack traveler in China. You're tired, or not feeling well, order "fanqie chaodan" or "xihongshi chaojidan" or "mushu shizi" (in dongbei) and you'll have a good meal that soothes the soul and body. SOOOOOO good. Lovely, authentic preparation. Thanks!

Thank you for the recipe!! Going to make it today. The first time I had this was when I studied abroad kungfu in Yantai (Shan dong) and we would order this from the nearby restaurant for maybe 6 yuan( 1$). It was on the safer side of foods that we felt more comfortable eating 😂

This is perfect. I make 番茄炒蛋 all the time, but never cook the eggs and tomatoes separately. I like to add a little ground pepper as well. We're constantly told how bad it is to use sugar in cooking, but I am starting to think that just the right amount of sugar is one of the secrets to great Chinese cooking. Will try a teaspoon next time (tonight!)

Eggcellent, I like this video. Thanks for the idea. I always have cooked the tomatoes and eggs together. This is better, cooking them separately and letting the tomatoes develop their own texture. Hard or soft nice to have a choice. Thank you for the inspiration. Is there a recipe like this that uses tofu instead of egg? I can see making the tomatoes like you did and pouring them over noodles, like a quick spaghetti sauce. I cook for one and it is expensive to buy all the spices and sauces to make one meal, so I am wondering if you have thought of selling your own brand of spice blends? Little packets that we can add to each different recipe you create. Something like the spice pouch that comes with instant noodles, only healthier and tailored to each dish? Be great to have these for hiking and camping. To be able to drop your spice mix into a meal and have one of your flavorful recipes around the campfire will be good. Better than takeout because there is no restaurant that has delivery to the top of the mountain. Yes, your own brand of sauces and spices please. Do you have a name for the restaurant you will own one day? When you open your restaurant, if you need help, I will work for food:) Thank you again for the video, as you know, we must go eat now! Most videos on this get it wrong and don't put the heat on max. Without this step, the eggs don't expand to maximum fluffiness. Great work!

I love this dish, I also love tomato egg soup (Fanqie Jidan Tang). When I used to work in Chengdu, the canteen would often serve a "Cabbage Water" soup for lunch. It was kinda like a broth but had little bits of cabbage in it as well. Any Chance you have a recipe or know how they might have made it?

You can but you need a pretty big one so you have enough room to stir fry. Or you can cook a small batch.

GBloc she is using a cast iron wok. A very well seasoned wok... because my cast iron isnt as nice.

You can for that dish but for many chinese stir fry the large area and thin base makes a big difference. Cast Iron or carbon steel will last a lifetime just avoid the ones with non stick coatings
