In episode 2 of our series on recreating Kentucky Fried Chicken / KFC at home, we travel to Kentucky to eat at 3 restaurants that Colonel Sanders had a hand in creating. The original 'KFC' Sanders Court in Corbin Kentucky, Lee's Famous also in Corbin, and Claudia Sanders Dinner House in Shelbyville Kentucky. We compare the three fried chicken recipes side by side and compare the flavours. We also crack open a jar of Marion-Kay Spices 99X chicken seasoning to smell how this purported clone seasoning compares to what we are tasting.

Hello again from Kentucky. I have eaten at both the Original Sanders cafe and the Claudia Sanders (and I have eaten Lee's chicken). I concur with everything you say! And I see that you have a bottle of A-L-81 (A late one ). Nothing screams Kentucky more than that! The standard AL81 is ginger.

I’ve been making my own fried chicken for over 20 years, and much like you am fascinated by Harland Sanders’ original chicken, and have read all manner of myths and ideas and ruminations on everything fried chicken related. The one constant I’ve come to realise, is less is more, ingredients wise that is. Less ingredients, but in large amounts. A lot of cooks can become fearful when a recipe requires a heavy dose of seasoning, but if one is making everything from scratch oneself, with the finest ingredients, there’s no reason to fear such pokey concoctions. Time and again, the ultimate results come from a combination of slow reared birds from good local farms, clean oil, and a fearless amount of freshly ground black pepper and lip smacking, minerally sea salt in the flour coating. A good selection of similarly well considered fixings, tracklements and accompaniments can also bring a noble platter of crispy chicken to life also. It’s a shame such a fine but simple dish has almost become debased through decades of greed and dilution, but when made oneself at home, with love and enthusiasm, fried chicken really can be one of the best things one could wish to eat. I look forward to the next instalment

Awesome ! My grandfather lived in Corbin , My father was born in Shelbyville . But anyway, my grandfather worked for Diamond Match Company and knew Col. Sanders , sold his stores matches . Eventually this business relationship turned into my Grandfather being made a Kentucky Colonel with help of Col. Sanders

KFC Fried chicken isn’t prepared the same after the passing of Colonel Sanders when Colonel Sanders was alive they had a crisping box A metal box for the chicken was put in so that it would become a little dryer on the outside I am old enough to remember a time when the colonel sanders showed up at the local Colonel Sanders outlet and personally serve chicken to us I might’ve been a small child but I remember all the food tasting a bit more natural

eidrag what? lmao... if by more flavourful you mean it has more pepper then sure, KFC chicken isn’t really flavourful you get exactly what you expect when you eat it, if u want s good fried chicken don’t be traditional, do it differently if flavour is the goal :)

originally the chicken was held in a conventional warming oven after it was cooked, which is a dry heat source. trouble was the chicken could only hold in the oven for about 30-40 minutes before it dried out, and the later corporate kfc owners felt this was not acceptable. so, they invented the humidity storage oven that they use today, which can hold the chicken for hours and hours, the problem is that the chicken looses all of it's crispness after 15 minutes, which is why kfc only serves soggy original recipe today. in fact the official kfc cooking instructions say that the chicken is required to sit in the oven for 15 minutes before it can be served to customers, to insure uniformity. occasionally you will get lucky when a kfc employee breaks that rule and serves you crispy original recipe.

I actually just had KFC for dinner here in Rome, Italy. The Italian colonel definitely has a different flavor than the American version.

GREAT ROAD TRIP!! You looked at flavor but I noticed that each offering had good adhesion for the crust and an appetizing color and crispness. I wish you had also commented on moistness and grease retention.

Like most viewers of this series (I’m assuming) KFC was a staple “treat” of my childhood (grew up in Ohio). Fond memories, it was a VERY big deal for us. Haven’t had any in decades even though there are a few KFC restos here in France. Thanks for taking us along on your road trip. Looking forward to your experiments in your “lab”. We were at the KFC in Corbin last May on a road trip to visit Rick's family. Fun place to visit. Wish we had known about the other two places. Next time we go up we may have to stop. As for fried chicken, if you are ever in NC or near a Publix supermarket, give their fried chicken a try. No southerner would ever turn down a piece of that heaven!

I’m new to the channel but have become somewhat addicted. I’m from the small town of Brownsville Ky. It’s about 20 miles north of Bowling Green Ky (home of the corvette). I’m honestly a bigger fan of Lee’s chicken myself.

I am excited for this. A few years back I followed the cracking the original recipe code site you referenced in your first chicken episode. I marinated the chicken pieces in a buttermilk/hot sauce soak, using their most recent spice blend (at the time) and frying it old school in an open pot. It had the texture of Popeye's but the flavour of KFC, it was awesome. I even bought an old school Wearever Chicken Bucket to continue experimenting, but, never got around to it.... Keep up the awesome work!

I have to say at Famous Recipe has always been my favorite due to the fact that KFC has a low point back in the 1980s/1990s when their chicken was extremely greasy and Lee's was knocking their chicken out of the park. Fast forward to the 2000s and KFC finally got quality back on track with an extreme amount of consistency in their chain. Now if only the folks at YUM! would put Sweet Tea north of the Mason Dixon line then all would be perfect. And a huge "props" to enjoying an Ale-8-1 with the fried chicken. OK, so it was not the traditional ginger flavor, but at least you got one of Kentucky's most famous beverages. I cannot wait for the rest of this series!

I live in CT. We use to have a Lee’s famous recipe fried chicken here. It was the bomb I loved it then they all went away. It took me a long time to like KFC. But I still wish that famous recipe fried chicken would come back. to me that was the best.
