its very easy to have oil too hot, when I first started deep frying I was very surprised to learn that 350 degrees is only like 2.5 or 3 on the dial. serving this leftover with fish sauce sounds excellent! I'm a big fan of uncommon fusion things, and that honestly makes so much sense intuitively to me
