There are many ways to cook seitan. We like to keep things lower fat and no oil if possible, so, we came up with three ways to prepare seitan, and we wanted to show the differences!

Love your channel!! I have been cooking seitan for years. I always use the simmer method. I make large batches (8-9 servings) and freeze the remaining servings. I add flavorings to the "broth". Always has worked best for me!

I wish!! Simmering always turns out 50/50 for me. Steaming it always turns out though. Wish I could nail down the simmer 🙁

I used ypur recipe yesterday and made 4 flat cutlets, while I was looking up your recipe I came across a method of cooking in the instant pot. I placed the cutlets on the bottom of tne pot, covered them with water just to cover and did manual for 3 minutes, let it naturaly release. They were amazing! I couldn't believe the taste with so simple ingredeints and just water. You have taken seitan to a new level.Thank you so much.Try the Ipot, so easy

I pressure cook mine in the instant pot. I will make up a few 'cutlets', freeze them as dough, then cook them from frozen as needed. I would suggest wrapping them very well to freeze and using within 2-3 weeks. I love seitan but my stomach prefers it occasionally.

Another fantastic way to get more texture and flavor is to take the pre-cooked seitan and pan fry it on both sides to create some char, which allows it to hold its shape, and then adding liquid/broth to the pan to essentially steam it after you've charred it

Yeah this was just the base. Pan frying usually requires oil, and we were avoiding that in this particular video.

I wrap mine in butter muslin and kitchen string when I simmer. It seems to keep the bubbles out, and I don't get a dumpling texture. And you can wash the muslin for re-use.

thanks for this video. It helped me a lot. I used to swear by the fry-simmer-fry method, but I had trouble with that recently and was inspired by you to try steaming and really loved that method, even if it got a little gummy and I had trouble keeping enough water in my pot for it. This is making me want to go back and give simmering another shot!

I usually steam my seitan adding lots of flavorings to the liquid before combining the wet and dry However when making steaks then i simmer in flavored liquid eventhough ive flavored the seitan before the simmer via the wet ingredients, the broth just gives it extra flavor but ive found not that much from the broth, i boil it first the liquid then bring it down to a simmer and only then would i add the seitan steak pieces, ive found that if the simmering liquid is too hot (more than a simmer) the seitan will become bready in texture After using these methods then i fry or do other things to the cooked seitan, like fry the steak seitan , or use the steamed seitan in like unchicken teriyaki or unchicken shis tawook or any other type i would like to make Love the both of you, you make a wonder pair in life and in cooking, ty for your videos

I have steamed mine in the Instant Pot. And I have steamed in a rice cooker. I have a large "bean pot" that is a bit too large for the large burner on the stove, but it works and we can steam up to 8-10 cutlets at once. Never tried any other way. I am too new to making seitan.

Thank you for this video, and all the other awesome videos on your channel. This video really helped me narrow down the different options and textures. I typically wrap mine and cheese cloth and steam it in the Insta pot. I’m gonna have to try the simmering method .

Thanks for this video! It’s very timely as I’m also trying to find a good method for when I don’t want to fry the seitan. I just tried steaming today for the first time just as you both did here. It worked out well. I’m going to give simmering a try next. The tips here will be very helpful for dialing in my preferred method. Also, I didn’t know about resting the dough overnight. I’ll have to try that too. 👍

I made seitan years ago, mostly turned out ok, simmered once to high and came out with sponges!, they tasted great though, I need to get back to making it again, thanks for all the great info

Thank you for sharing this cooking method comparison! Very helpful. I bake my seitan, for deli meat. I have also used the simmering broth method, but I haven’t made it often enough to feel confident about it. I need to try again.

I forget the Osem consomme is vegan. I know it's Pareve for kosher purposes. It's really good stuff.

Thanks for this... I will give it a try! Wondering if you checked the sodium level of the chicken flavoring/consume you are using or suggesting.... 1020 mg is quite excessive!??? I will stick to seasoning it with herbs and other spices. Thanks for sharing the techniques. Enjoying your videos

It is a bit more sodium than I'd like, but we don't eat all of the recipe in one serving. This is probably 4-5 servings for what we made here, making it 200mg per serving or so.

See now I'm curious how the texture of each varies after they have been in the fridge overnight. I've been rather shocked how much resting changes the entire seitan or anything made with VWG.

I don't normally use rice wine vinegar, and each recipe is a little different imo. I do often add it when making seitan from vital wheat gluten though.

This video is so helpful. Making seitan is pretty mysterious. I usually steam my seitan and I am uncomfortable using so much aluminum foil. I'm going to try simmering.

I would like some wash flour seitan Vital wheat Gluten smell and taste I can't stand. Please help me. I need a meat alternative and store bought has too much salt and fat. I would sincerely appreciate it. My washed flour was too spoungy or tuff rubber. Help!!!!!!!
