It depends on the company to company, some companies take written test as well before any interviews for screening purpose.

For me as interviewer the difference between someone have one or two years experience with someone have 5 years experience will be more about architecture of application micro services Kafka or active mq and will ask him more about his last project to know if he understand what he is doing because I think it’s doesn’t make sense to ask him deep question about core Java which he will not use it when he will work with us From my opinion the purpose of the interview is to see if the candidate will match the requirements of the position or not it’s not a competition who will win

It is hard to say, So much depends on the management and the urgency of the requirement. But I hope you will get your desired numbers.
