The Uesugi story is mostly what you would expect for the most part. We do a lot of early battles as Kenshin, mostly against the Hojo and then we start engaging the Takeda.
Ranmaru visits early on and gives Kenshin a gift from Nobunaga, a folding screen depicting Kyoto and some good wine, saying the Oda want to be on friendly terms. Aya thinks it may have a double meaning saying that Nobunaga is aiming for the capital and this is an attempt to provoke Kenshin, but Ranmaru assures it isn't. Kenshin accepts for now at any rate, so he can focus on dealing with the problems in Kanto.
At first, we're following orders from Kenshin's adoptive father, Norimasa Uesugi, but he hands over control of the Uesugi to Kenshin pretty quick after fighting the Hojo, since he believes he could do a better job of protecting Kanto.
Later, Yoshikiyo Murakami comes to Kenshin after having been run out of Shinano from the Takeda and the Sanada, begging Kenshin to attack the Takeda. That's what starts the first Kawanakajima battle. And as you'd imagine, Kenshin comes to enjoy his fights with Shingen and respect him. He stops fighting him for a while so he can turn his attention to the Imagawa to the south, knowing he'd be done for if Kenshin chose to attack him then, but had faith he wouldn't so they could enjoy another proper battle. He went a step further by providing them with the salt they needed to keep fighting. Shingen returned the favor with another fight at Kawanakajima.
After the battle, Kenshin decided the match was a draw and said they'd settle their score after Shingen fulfilled his goal and reached the capital. Kenshin then turns his attention to another force comprised entirely of generics, the Hatakeyama clan. After the battle against them, we see Shingen falling ill and regretting that he can't reach the capital, hallucinating that it's right there in front of him. Thinking he made it to the capital, he starts saying that now he has to go back to Kawanakajima to fulfill his promise. He dies soon after.
When Kenshin hears the news during a meal, he's so stunned he drops his chopsticks. He asks to be left alone and in the following scene we see Aya outside his room as he lets out an anguished scream. Really rare to see Kenshin show that kind of raw emotion.
1:03:55 - Later, Kenshin says he's going to face his nemesis at Kawanakajima, confusing Aya and Kanetsugu. That's when we get the mid-story cutscene. Uesugi story is the only one that gets a mid-story cutscene that isn't ripped from SW3. It's short, but it's nice, and shows Shingen's spirit lives on in Yukimura.
After the battle, Yukimura apologizes for defiling their battlefield, but Kenshin is satisfied and says that Shingen fulfilled his promise through Yukimura. From then on the Takeda and Uesugi begin to fully work together, all of them carrying on Shingen's will. As such, they move to engage Nobunaga to reach the capital and fight the Oda for the remainder of the story. At this point, you're able to use all the Takeda officers in battles along with the Uesugi ones.
But there's only two battles against them. As with the Oda story, we don't see this to its conclusion, but you can pretty much imagine the ending. This one goes more what-if with the Takeda and Uesugi clans combining and feels pretty personal to Kenshin. The remaining scenes are things like Kenshin teaching Yukimura his war tactics and Kanetsugu going into fancy speeches about how righteous everything they're doing is. You get the gist of it.
