Great tip, that solves something I've scratched my head about several times :) You would then need to do some logic, that ensures "Select..." is not a value that's 'saveable' to your actual data, right?

This is a great option. The only issue I am having is the user accidentally selecting “Select…” and then submitting the form to a single line of text. Any suggestions to avoid this?
You can stop "Select..." from being stored with your record in several ways. One way would be to add this to your validation rules. If you are not sure how to do this then I have a video on how to implement validation in Power Apps - ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-SYUAlSHBpsU.html. Another way would be to trap it when you are saving your record by using an If function within your Patch statement.
