We budget an additional 33% for start up costs and fold an additional 20% to final menu costing to cover costs like to go containers, cleaning solutions, napkins etc if you don’t your projections will be off, learned a variation of this in culinary school and 4 Seasons but the function is the same
Where was this video when I started. Sadly, I am one of the 90%. A result of not having the extra 25% you mentioned as well as setting up in a competitive area. It’s brutal. But I have learned from my venture and will come back stronger.
I live in Carrizo Springs TX and on March 1st I'll be opening a small BBQ place here in town, Smokin' Joe's Pit BBQ. The building already has a brick pit and I have an off-set smoker on a trailer that I will combine with it. I have had a lot of positive feedback on my BBQ and believe I will do pretty good. We will have brisket, pulled pork, ribs, and sausage. The sides will be corn, pinto beans, green beans, mac-n-cheese, and potato salad.
Pure gold, thank you for making this video! BBQ started out of curiosity and my passion for it has just kept growing and growing and it’s gotten to the point where people are asking when I’m going to open my restaurant because they love my BBQ so much! I keep telling them I don’t think I’d make it in the restaurant business because I have no experience but maybe a food stand to start out see how it goes, I have an advantage because my community already know me and my BBQ but now after watching this video I’m way more confident. This was truly awesome, I just got approved to start my first business after being in the Marines and still work for the government. But, knowing this is what I truly want to do I have gone "all-in" on my idea of a food trailer. Red's BBQ and Pizzeria will feature the best of U.S. BBQ, Brazilian Churrasco (BBQ) and Napolitano pizza. The trailer will have two satellite tvs, LED lights, surround sound, beautiful lighting for a seating area and I can create what I am calling "destination eatins." Because we need to focus more on our families and friends and after having lost my wife and mom, all a week a part, I quickly realized that our life is short. The most important thing we can give someone is time, and I want to have you spend your time with me. I will create an atmosphere where you will not wanna leave. Thank you for your words, thank you for your wisdom and I took very good notes. My website is up and running along with my YT, Ista, Twitter... etc... I did all of that first before I started the business to drive up the demand to test the market... the trailer is being built as I type... Would love to be able to chat some time, to learn more! As a person that is getting into the BBQ Business... Wow this right on to what I have been going through. A good way to help organize your priorities is by using the Eisenhower Matrix. Look it up its phenomenal.

You say to start a trailer. In the Texas BBQ forum on Facebook which I believe you are a member up this subject was just brought up and asked to the owners in there. Trailer vs B&M. Most agreed that a trailer is a bigger hassle and in come cases a B&M cheaper.
It can be somewhat of a hassle, but the risk is lower and you can bail on a mobile unit and get your money back. It's not terribly expensive to go test the waters (even legally with health dept etc) with a mobile food unit. I will say a B&M built for a stable business ($2 mill annually and up) will cost some $$. If you succeed at the trailer and move into a B&M you can turn the trailer into a catering and even second location. Now you have two operations established. You can surely do a store first then do a mobile unit, but my experience would lean on the side of mobile food unit first to prove the concept and then B&M.

Do some catering or pop ups first. BIG difference between cooking a brisket at home for fun than trying to cook for 50+. Its not easy and becomes a "job".

Great video! In the infancy of creating my own place and will be mobile for the first 5 years or so, according to my business plan. The numbers game is the one I'm working on now. Hoping to have a pro forma done in the next week so I can start shopping for funding! I can't wait to get my brand of que out to the public!

I had a bbq joint, now in court because family saw how much money I was making and tried to screw me. Never go into business with family and get a contract on anything you do.
Some good advice my little bit is don’t follow trends to the point that your no different to the guy down the road, reinvent look what’s happening and keep changing (MacDonalds is a great business for this ) I looked at what was happening during corona mayhem and seen how pizzas where booming so I decided to build a platform around what they do eg packaging ,deals etc I grew instantly to become the biggest independent food supplier of ribs I know sell 100 kilos of ribs a DAY I no longer cook I work on making my business grow as my job
I also forgot I started with my homemade $100 selfbuilt smoker this is still being used today it makes $500000 a year in sales so don’t always think you need the best smoker you need the best business plan
thanks for the concise thoughts on a complex subject.i am gearing up for pop ups and street vending my BBQ here in California,we had a couple laws come into effect this year which really help a start up out,we already have tacos,elotes and now we need BBQ here.i am going to have to finance a good sized Pit but in the meantime i will put videos like this and posts on BBQ groups on FB giving an idea of how much meat per person or plate and how much to charge to good use.The cooking style and recipes are relatively easy by now but as you explain that is only half of it all.BTW i recently replied on one of your comments on BBQ Pitmasters on FB,my name is Jason and greetings from a BBQ dork lol or geek are in order.Again,thanks for the upload.

I am VERY Serious about going BACK into the BBQ scene .... Except this time, since it will only be me ... I have already had the BBQ "Shack" experienc... That is fine, but you really depend on the Weathere.. Food Trailer is more of what I'm thinking... Doing Gun Shows, etc... I really want to concentrate on GREAT Smoked BEEF JERKY... I have been around BBQ since I was a teenager... won't bore you with the stories... but all I know is REAL WOOD Smoker... offset smoker. I would think that if I got a Pellet Smoker, it would be more "HANDY" for me... But I am very old school traditional... and don't know if it is worth it just for Smoked Beef Jerky and maybe Smoked Chicken... Where do you make your Smokers?

I am thinking about a new type of restaurants : eating-spots in eating-spots, food keeps changing, chefs also rotate. this is opposed to current restaurants, thanks to this rotation of food and chefs, eating-spots are way more powerful than restaurants, along with that, there is an app, people vote for the food that will be cooked in the next days, menu is influenced by the live input of the people via an app.
Lot of valuable info in this little video..my family has been kind of in same spot you mentioned starting off. We hit truckstops, babershops, social media etc along with catered events but decided to start fresh and regroup especially in terms of branding/marketing. We are struggling in alot of areas but mainly getting up the capitol. Is there any particular companies youd recommend for branding/logo/advertising etc? Also any kind of of info on wholesalers or food companies for buying product at less then retail cost? Trips to costco or gfs really doeant save us much in terms of food expenses but without purveyors or tax id to get business accounts thats how weve been doing it. Thank you for the info

Is there a certain setup or way to get into selling bbq that makes things a bit more easy on the paperwork. Primarily I focus on smoking things like brisket, pork butts, ribs, and sausages.
@@Majorumpalumpa Short answer, many municipalities won't let you make your home a commissary. I've seen more than my fair share of folks catering from their home, but operating a BBQ for sale to the general public requires a commissary.

Would sitting with 14 Fortune 500 CEO's out of the San Francisco financial district and getting them to allow me to solicit my business to all of their employees nationally, and sucessfully achieving this in only 17 days with no high school diploma or help from anyone around me.....PLUS no business actively going... BE CONSIDERED A SHORTCUT ???.... " Dont take shortcuts" you say...lololo.. Give me a break.. ALWAYS take The Path of Least Resistance in everything... The world is to big and theirs to many big things that need to be done while still here on earth.. DON'T waist valuable time overthinking things OR lingering in your idea when anyone can create a well oiled self operating machine.
