Seven Layer Dinner - Traditional Newfoundland - Bonita's Kitchen

Today we will be making Seven Layer Dinner, this is a delicious meal made up of mostly vegetables and a few sausage. My Dad would make this meal at less once a week and it makes good leftovers.

3 medium potatoes, peel and slice 3 medium onions, peel and slice
3 medium carrots, peel and slice ¼ cup uncooked rice of choice
1 can green peas, or frozen 1 or 1½ pounds sausage of choice
1 can tomato soup 1 cup water, to rinse can
1 tsp sea salt 1 tsp Pepper
Method:
Peel, wash and slice all vegetable’s and place them all separate into a bowl.
Grease a deep casserole dish and start layering the following.
Start layering potatoes on the bottom, then a layer of thinly sliced onions, season in between each layer with salt and pepper.
Next layer thinly sliced carrots, sprinkle your uncooked rice of choice.
Top with a can of green peas and its juice, or frozen.
In a frying pan partly cook sausages, then remove them and cut in pieces, add to casserole dish.
Next pour a can of tomato soup over the layers and rinse the can with cold water poured over top of everything.
7- Top with a pinch of salt and pepper, cover the casserole dish with foil wrap and bake in a 350°F oven for 1 hour or until tender. Depending on your oven.
Serve with fresh bread rolls and cup of tea…..
Bonita’s Tips:
Peeling and slicing all vegetables in advance and soaking them in cold water, helps you prepare your meal faster.
Use more seasoning you like in this meal, this was just the once my Dad would use when making his.
Having the sausage partly cooked takes off any oil that will run off them over the veggies, but you do need some.
PLEASE NOTE:
Please feel free to change any ingredient with one you love or tomato soup with a cream of mushroom or chicken. If you use fresh or frozen peas take a extra cup of water to replace the canned pea juice. Use a different sausage, meat or chicken. MAKE THIS MEAL YOUR OWN BY BEING CREATIVE. Enjoy :) Bonita

I'm not sure how this recipe wound up on my "recommended for you" list; especially since I'm in North Carolina, but I'm certainly happy that it did! I watched it and told my wife - a Quebecoise - about it, and this afternoon she made it and followed your recipe exactly. I needed three helpings to decide whether I liked it or not!!! Growing up in Corner Brook my mom made this every week. She would use breakfast sausage and put them in the middle layer. She would cook it in a big roaster. There was never anything left except my sisters onions. This has brought back so many good memories. Thank you!

I love Newfies! The accent is unmistakable to me as my grandad was from the beautiful St John's ❤️ and I still have a big family there. Once again "poor man's food" that's healthy and delicious. Very similar to Lobscouse, Lancashire Hotpot, Stovies and Irish Stew. One pot wonders, made with what you had, but they all taste so good 😋

@Just think : Look, I get that it's not "fine cuisine" but billions of people across the globe have been sustained by this type of food for many years and many of these simple recipes have been handed down over the centuries. Just, please, don't throw their experiences to the curb. Calling it slop is an insult to them, it was to me until you proved reasonable. Now, how about you and I sample some cuisine I've never tried... French perhaps...?

I wish I`d`ve found this channel sooner. My dad(a Newfie born and raised), loved the food of his birth and childhood province. I`d buy him any food I found from his heritage in the grocery store. Dulce, salt cod, hardtack for fish and brewis etc. He passed in November of 2017, just a month before his 83rd birthday. I miss him every day.

One thing that's appealing about this recipe is that it doesn't have cheese in it! While I like cheese, it seems almost every casserole or "hot dish" recipe has cheese. Sometimes its nice to have something without it.

This dish is AMAZING, I never knew where my Mom got it from but now I know - god bless! Sometimes she'd use hotdogs or Vienna sausage which I love to this day and use myself, sometimes real sausage like in this vid. For an extra treat she'd sometimes mix parsnips in with the carrots and turnips in with the potatoes. I seemed to be the only one who LIKED turnips so I loved it. Awesome dish, THANK YOU for this vid, I'm going to make it for the first time on my own. xx

Being vegan now I used vegan sausages and I made my own sort of tomato soup. I use a can of tomato sauce and I added some garlic because that is in regular tomato soup and a little bit of water and a little bit of soy milk because a can of tomato soup contains Dairy. I think it worked out really well I enjoyed it very much and I was able to freeze about six portions. :-) my mother and father always had tea with dinner which I call supper. My dad was Scottish and my mother was French Canadian so there was bound to be T in there somewhere! Lol

I didn't have my first coffee until I was 21 years old and me and my husband more to northern Canada and lived there for 30 years. In MN USA we love our casseroles and hot dishes! This was surprisingly light and enjoyable. The tomato soup changed with the vegetable juice,rendered sausage, and starches into a fantastic, rich gravy. But, with all the vegetables made this an incredible, satisfying light, yet savory comfort food. Thank you for sharing I will enjoy this many more times. I added one green bell pepper sliced into thin rings, I also added 1/3 cup rice next time will go for 1/2 cup and I used frozen peas with an extra 1/2 soup can of water.

This recipe caught my eye. My family was one of the earliest Newfoundland settlers between 1515-1530. I'm looking at recipes and anything to reconnect to the culture of my ancestors. I think even I can make this one. Thanks.

That looks delicious! If I try to make it, I'll probably use cream of mushroom soup instead of tomato soup. Probably with some sliced mushrooms added to it.

@@bonniebrown1305 I would part cook it so the oil won't go through the vegetables but if you are using a lean ground beef maybe put the meat layer at the bottom if you are not going to cooking it first. Bonita

Had lots of left over ground beef and Italian sausage from making home made pizza 2 nights ago! Had no idea what i was going to do with it. Then i seen this video ! Already had evrything already in the pantry! Now its in the oven cooking for supper ! Thanks Bonita ! :)

I do fennel, leeks and onions as a layer we like the flavors. I make my own tomato soup. Surprisingly my mom liked to use V-8 juice she said it was more flavorful.

when my children were small I used to make what I called "shipwreck stew" I used an 80/20 hamburger (raw) on the bottom and then potatoes, onions(diced small) sliced carrots, diced celery and what ever canned veggies I had, then used the tomato soup (rinsed out can ) or any variety of canned soup I had each soup brings a different flavor. . .each layer had a small amount of salt and pepper . . baked in 350 oven until the veggies were done about 1 hour inexpensive and very filling.

We make something similar, ground beef, a layer of onions, carrots and sliced potatoes and tomato juice to cover. One of my favourites as we were growing up and you could feed a crowd served with homemade bread.

Do you soften the potatoes first for this? I didn't and they were a bit firm, so I tried again, cooked for longer on 180c or 350f for translation, same as what you said, idk lol what am I doing wrong? I even tried adding extra water, laying them differently etc. Pls help😆 ive made 3 now and I'm going nuts.

I used a 9X13 pan . . .1 lb of 80/20 hamburger spread out on the bottom . .. . ...about 4 medium raw peeled russet potatoes sliced about 1/4 " thick" . . 1 used 1 large onion because we like onions, but diced small so the kids didn't notice them !) . 3-4 carrots sliced about 1/4 " thick . a cup of frozen veggies . . .each layer gets salt and pepper to taste . . .then I mixed a can of soup with a can of water and poured over the top . . and covered with aluminum foil and sealed the edges. . . . . and baked for about an hour at 350 . . . I so hope that your family will enjoy this Shipwreck ! PS I used a mandolin to slice the potatoes . . .

Yum , I've done this but without the rice and used mushroom soup instesd. But now I must try it your way with my own twist of canned tomatoes with the tomato soup or salsa and a handful of feta cheese atop the onions.

@@cathyrowe594 I don't like tomato soup either, but sometimes the other ingredients make it much better. Remember that lasagna and pizza have some ingredients in common with tomato soup, and they tend to taste good to everybody.

My SIL makes a very similar dish with a homemade white sauce and ham. No rice though, so you don't have to have enough liquid to hydrate the rice.

I live in Ottawa for the last 25 years. From Marystown Nfld. Retired 3 years ago. Bought a cottage in Garnish Nfld. Go home every summer from May-September. We are from UpperIslandCove, NL and we have visited Marystown a few times over the years, golden sands is what stands out to me, we stopped in there a couple of years ago on our way to the ferry to St.Pierre. Looks like they stopped all travel tom NL this year and thats to bad because people should be able to visit with social distancing in mine. This is Awesome and brings back so many memories to my childhood too ! I I put a mix of red white and green onions as that layer and carrots and celery mix and ground beef mix s&p and thyme tomato soup peas with juice and I’m going to add the rice cos that’s a wonderful addition ! My girlfriends mum used to make this and I always loved it! I’ve taken it to many potlucks at work and none was left ! Thanks so much for sharing ! Your such a sweet and fabulous Chef !

That looks similar to a stovetop "casserole" my mother used to make with meatballs, potatoes, carrots, onions and tomato sauce. Us kids loved it. I love peas in that kind of dish. I don't use commercial soup anymore but the ingredients for that tomato soup is basically tomato puree, wheat flour, sugar and citric acid. I wouldn't want to sugar anyway. I would probably mix a bit of flour into tomato puree and use stock. I am likely to try this. Thanks.

Good frugal meal, a little goes a long way. Like another poster, I detect that slight Irish accent that Newfoundlanders can have at times. Not a 'brogue' as such, more the old Dublin accent. Love it! I think I might be able to get my poor hapless husband to cook this all on his own!! Tfs. :-)

Looks delicious and hearty. We had something similar with ground beef and probably her home canned tomatoes. I don't remember peas and am trying to remember the seventh layer. I think my Grandma pressure cooked it, also.

I remember this back in Maine! We always looked forward to it especially if Great Aunt Floris decided to go wild and crumble up all of the packets of Oyster Crackers the tourists didn't use and mix them together with some cheese and whatever dried herbs she had on hand and add it to the top for a little crunch. It was still called 7 layah suppah though we privately called it a 7 and a half...

I'm from Maine too! Grew up in Houlton. I worked at US Customs as a customs broker ... the drivers and ppl from Newfoundland were the kindest and most friendliest people. I volunteered at Kings Landing outside of Fredericton. I just got done watching a documentary about 9/11 and the number of ppl that the people in Gander Newfoundland opened their homes to those who who were stranded there... awesome dish! Reminds me of home...

We lived pretty basic but if we had food on the table and someone stopped in for a visit they was given the same food even if there wasn't enough to go around. Bonita, I live in Florida and I also had this as a kid. My Mom could throw anything together and it was equally as good. Our door was always open never made a nevermind who you were you had best take that plate and fill it up. If any cousins showed up or better still my nephew would bring his guys over for lunch to eat whatever was left in frig. My Mom and Dad both was into feeding everyone. Everything was done at that kitchen table.

It strikes me that Newfoundlanders have comfort food! Good on you. Look forward to trying it. Question though, when there a couple years back, way up north, I had something that I've forgotten... it's name, not its flavor as it was wonderful.... included salted cod, a bit of bacon or pork and "hard tack" I was told it was a classic dish of "The Rock". Bessel? Bissel? Can you tell me what it was and share your recipe for it? Thank you. Been to your part of the world twice,.. friendliest people on earth I think.

I'm from south Louisiana (Lafayette), and I was very curious about the accent which is so similar to what I hear in the southeastern part of our state. We are such a melting pot here, many dispersed French Canadians (cajuns), Irish, German, British (England, Scotland and Wales), Spanish, and French that pronounce "th" as "d" sound. I closed my eyes during the video and imagined being in my great grandparent's home...such a cherished memory!

I made this 7 layer dinner tonight with pork sausage and it was easy and delicious!! Thank you Bonita! I'm looking forward to trying other recipes especially the tomato soup cake, your style of cooking is right up my alley
