Sharon's Three-Cheese Sardine Pasta
INGREDIENTS:
macaroni pasta
coconut oil or preferred oil
2 cans of sardines
garlic
onions
1 can of whole tomatoes
anchovies
black olives
basil
capers
parmesan cheese
cheddar cheese
mozzarella cheese
all purpose cream (optional)
RECIPE:
1. Cook the pasta. Follow package instructions.
2. For the sauce: In a medium sauce pan, pour a spoonful of extra virgin coconut oil or your preferred oil.
3. Sauté deboned sardines in low heat. Set the sauce aside.
4. Add garlic, onions, and leftover sauce. Let it simmer.
5. In a separate bowl, crush whole chunks of canned tomatoes.
6. Add tomatoes in the pan.
7. Mix the sliced olives and basil.
8. Taste and adjust to your liking.
9. Add anchovies. Mix well.
10. Mix the sauce with the pasta.
11. Add capers.
12. Add parmesan and cheddar cheese.
13. Add all-purpose cream.
14. Transfer to a serving dish.
15. Top if off with mozzarella.
