In this video, I am reviewing the MinoSharp MS-471 ceramic japanese combination sharpening stone grain 240/1000. The stone was bought used with my own money.

For those interested in who I am you can find below a short presentation.
My name is Daniel, I am an electronic engineer who started some time to work with wood. Wood was a passion of mine since my childhood when I grew up with my uncle who was a woodworker.
When I was about 35 I bought a CNC machine and made several things with it.
Working with wood I needed some cutting tools so I had to buy hand planes and chisels. They needed to be sharpened so I have discovered whetstones and I have another passion now: sharpening. I like sharpening and I discover how relaxing is to sharpen a kitchen knife. I am not a specialist, I am a self though from what I read and from other people's movies.
On my channel, you can find movies with what I do in my workshop: sharpening, some woodworking, repairing things, and whatever I have to do and I consider to be interesting for you.

I have owned this stone for about 15 years and have used it for sharpening my kitchen knives-2 chef knives and 3 paring knives. The stones are soft, release slurry fast but are also fast cutting. The 240 grit side gives you a keen edge and the 1000 grit side provides an almost mirror finish. In my opinion you don’t need more than that for a working kitchen knife (the vast majority of knives won’t be able to hold a more polished edge anyway). I still have the stone and it’s lost about a quarter of its original size in 15 years.That’s fine with me but the stone is 3 times more expensive than it used to be and I think it’s not competitive with other stones on the market today. I think Daniel spent way too much time on the 1000 side than it was necessary.

Yes very expensive. :) And Daniel is a little crazy, he likes his knives shiny and that 1000 gives a nice shine. :)

I have the Naniwa Super Stone/Gouken Kagayaki 1k & 5k, and they both load up a lot. It is a little annoying, but easily removed with a rust eraser/ dressing stone. I think the rust eraser removes/less damage to the stone. I mostly flatten my stones with each other instead of using up my Atoma 400 for lapping.

I have a chinese 600 grit cleaning stone which is wonderfully. I flatten my stones using abrasive powder.
