A common question i have seen is how long does it take to sharpen a knife with japanese whetstones. Quite a few various machines , guided rod systems and other devices are out there to provide a " fast" method of sharpening a knife. How much time are you saving thou?
I recorded a quick sharpening of a small high carbon design Japanese Nakiri knife. Normally i do not rush at sharpening , since it is something i enjoy, however it needed to be done. Obviously this could be done faster than this 1st attempt of mine. This is just an average speed , from a normal experienced fee hand knife sharpener using some nice Japanese sharpening equipment.
I did mess up the camera angle for the paper cut tests , not much i can do about it aside from mentioning it here in the description.
This is just to give an idea of the time involved to give a bit dull or mildly dull Nakiri that wont cut clean threw paper a " kitchen sharp" , nice toothy edge knife only using ONE stone until it cuts cleanly and quickly / slowly threw copy paper.
The only equipment used is a Naniwa IZ1111 Sink Bridge , an Atoma #140 diamond stone( only used for flattening stones) and A Naniwa Chosera #400
I had just preformed a fresh flattening of this stone ( see my other videos) using an Atoma #140 diamond plate. So there is some additional swarf / cutting material from the stone left on the surface before i started sharpening.
I hope this is useful and may help someone figure out sharpening by hand using whetstones does not take all that long and can be done very comfortably without making a mess using nice equipment.
Yes this knife i sharpen isnt super dull , however i have other stones to deal with that . This is to show using ONE stone, a #400 grit model , can put a very nice edge on an average carbon ( or stainless) kitchen knife in under 8 minutes without me being really sweaty about the outcome.
This can also be done , by taking more of your time using a $30 King Deluxe 800 Japanese whetstone , a nice stone and this is just as a disclaimer. :-) Super nice gear doesn't give you better results.

No offense but you tutorial is wrong! When I see that you wash off the slurry with your sink water, I question if you know what you're doing...

is ok to wash off the slurry on this kind of stones, they don't dish and don't give grit. but I agree, he don't realy know how to sharpen
