I think it is for the sound. Electric drill are not nice to listen too, and Kiwami does a bit of ASRM with his video. So to avoid stressful noise he uses mostly manual tools.
Honestly I'd be tired too after turning that jar for the best part of an hour. I think he just likes the manual work. Everything you mentioned combined with his damn near infinite patient for sanding and sharpening (primitive rock kitchen knife video) makes me wonder if he has limits.

For those who don’t understand: 1. He grinds the rice into a fine powder 2. He sifts out the ungrounded parts and re grinds them with a mortar and pestle 3. He puts all of the flour into a ball mill to get it finer 4.he uses water to make a dough 5. He vacuum seals the dough into a bag with the knife template on it while flattening it. 6. He uses a needle to poke an outline to make it easier to cut out. 7. He binds the knife to make sure it doesn’t move 8. He sets it above the vent of an air purifier to dry 9. He polishes and sharpens. If I missed anything let me know! I just put what I knew because I saw some people not understanding what he was doin.
Its because the rolling pins don't turn as nicely/as easily when initially bought. when he cleaned and polished the insides, it turned a lot easier, therefore it could be made into a mill

Biodegradable maybe , but how much energy did he use to make it ? It s just like the biofuel shit , yeah it s betten at the end of the line , but all the process before requires so much energy that it makes it just useless , what s the point of this knife ??
