Brownie cutting tip. Use a plastic knife to cut them. It leaves you with nice edges. ❤. Everything looked fantastic. 😊

Add marbles to the water before freezing, so as the ice melts the upper pan isn't dropping down and pushing the water up the sides, making water go into your food.

Hey Becky!! Baker and cake decorator for over 15 years here. You can definitely decorate fresh cakes. They don’t have to be frozen BUT your icing (cream cheese icing in particular) and your filling are both super soft. The more layers you add to a cake, naturally the more weight will press down on the bottom layers. To help with this, you could add more powdered sugar to your icing to firm it up more. I’d also suggest a much taller icing barrier wall for your filling so the filling can not spill over it as easily. Also, after the bottom three layers, add skewers (I’d personally use a thinker dowel rather than skewers) and then a cake board and then continue with the other three layers of cake. This will help stabilize your cake AND take weight off of the cake layers on the bottom and put it on the skewers and the cake board instead. If you’d like an easier time smoothing your frosting around your cake, run your scraper under super hot water right before. That hot water will change things tremendously. All-in-all you and your mom did an amazing job of this cake. Bravo.

I agree with all your tips. A cake that tall needs to be constructed correctly to stabalise it to avoid any disappointment.

Love your cooking show! However, Ham hocks cook at least 2 hours prior to adding the greens. They have to be rinsed numerous times to get rid of all the vinegar taste❤️👌🏽

Hi! My family owns a bakery so here’s my input 😂. It’s not how soft the cake is, it is how soft and fluffy your frosting is. The frosting looks to be over whipped. Cream cheese frosting should be relatively stiff. Freezing the cake just makes the crumb not as much of an issue when frosting. You’re actually better off refrigerating the cake not freezing it. When frozen it will sweat more than refrigerated. When it sweats the cake layers will start to slip and your cake could fall. So with a cake that has this many layers you’ll want to do a few things, refrigerate it so it is cold (not frozen), make sure your frosting is not over whipped (most important for the frosting you are putting between cake layers it’s usually best to use a stiff frosting for this. If you want a curd type filling you can mix it into the stiff frosting), do not use a cake recipe that is too light and fluffy (pound cake is generally used for cakes this height), do not put too much filling between layers. I would have used about half the curd filling between those layers to avoid slipping since this specific filling is pretty wet. I hope this helps!

Although not a professional, I’ve been baking and decorating cakes for about 30 years. I’m adding this not to correct the information from the original post, all of which is correct, but to provide additional hints for those that are trying to improve on their cake decoration skills. The large icing bags are more difficult to handle. Also, the warmth of the hands tends to melt the icing so that the texture of the icing halfway through the bag and on is just not right (I do live in FL). Also, when making a barrel cake (this tall style of cake) it would’ve been helpful to use a cardboard round at the halfway point (between layers 3 and 4). Lastly, using ganache to crumb cake would’ve helped. It hardens a lot quicker in the fridge and provides additional structure. And the curd will definitely make it more slippery; thin layers of jam/curd or slippery addings.

I am Southern and have cooked collard greens many times. I have never heard of soaking them in vinegar. You do need to wash them thoroughly as they hold on to sand/dirt like leeks do. Cleaning them is a labor of love.

I grew up in the South and latter spent years up north, people in the South clean it, people in the North use vinegar. Personally I don't like how it comes out with the vinegar. But it's a matter of preference. I have cooked it both ways, and no the vinegar doesn't help with cleaning. In my experience it's a time of hard work and love. But once again it's preference.

Becky here is a tip for following your recipe. Put the printed recipe in a sheet protector an mark off with a dry erase marker each ingredient and step as you go. Makes its so easy t find your place.

Hi Becki, I am southern and I don’t soak my collards in vinegar. However, I wash them like 3 pr 4 times. I usually cook some type of smoked turkey or smoked meat. once you cook your meat down then you add your greens but don't add more water. Collards can make their own water and cook them on low until they are nice and tender (should be a really dark green collar and not crunchy). I usually add my seasonings, onion, bell pepper (BOTH DICED), a little sugar (just a little, its not to make them sweet but to cut the bitterness), vinegar (MAYBE 3 TEASPOONS, NOT TOO MUCH, helps to make them tender) and 1 or 2 jalapeño peppers. Some people add a little bacon grease (3 or 4 teaspoon) or butter (maybe half a stick). I'm sorry I don't have exact measurements. I free pour.

I like to dump some of the first water out depending. Then add chicken bouillon curry to my smoked meat water and collard greens. Season last.

I almost never add water to my collards aa it makes it's own liquid. Fat back, ham or bacon fat, chunked onion, salt and pepper. Serve with hot pepper vinegar. Mmm boy! Corn bread and black eyed peas. Our New Years meal and even better the next day. Am I Southern? Heck yeah. Lol.

I made boxed lunches with homemade bread and homemade chicken salad for 50 people. It’s a lot of work but there is nothing better thank hanging out with special people making yummy food for the people love ❤️ it’s definitely a labor of love❣️

My husband is allergic to pork, so pretty much all southern style collard greens are out of the picture. HOWEVER, I googled ground beef collard greens and found Kenyan style collard greens. It's amazing! We love it so much, I started growing cherry tomatoes so i could make it fresh! It has onion, garlic, ground beef, jalapeño, tumeric, ginger, cinnamon, coriander, cumin, collards, cherry tomatoes, and lemon juice. AMAZING!

The reason the cake filling was oozing was because you had twice as much weight (6 layers instead of 3) than you normally do along with a soft filling. It wasn’t so much that it wasn’t frozen. When I make tall cakes, I use a cardboard cake round in the middle with boba straw supports underneath. They act as pillars and help support the top weight.

I am a pastry chef and I was going to suggest this as well. Putting a cardboard round in the center that is resting on the support straws rather than the bottom cake layers will offset the weight issues. Also I would encourage you to try using a Swiss meringue buttercream. Even though it’s more work, it’s a better consistency for icing.

It is to help with bug removal…sometimes small bugs or worms will be munching on the leaves. Grew up on a NC farm. I normally check leaf by leaf & then wash through 2-4 washing.

I am also a southern woman who has eaten and prepared my share of collard greens and have never heard of the vinegar soaking method. It might be new school but I am sure old school is better, lol!!!

In my family soaking things in a vinegar solution is a traditional step in cleaning produce/meat. It can be very common in other black families and southern cooking.

For brownies...immediately after coming out of the oven - use a plastic disposable knife and slice them to size. They look perfect and the brownie doesn't stick to the plastic knife. I have been doing this for years and it has never failed me.

I'm from the south (eastern part) and have never soaked greens in vinegar so that's something I will have to try. Just triple wash with salt water, de-stem (for the most part) and boil them with ham hocks for extra flavor. Love all your videos! Going to try some recipes this weekend and follow along with your videos.

Hi Becky (and Becky's mom)! Thank you so much for sharing your videos with us. The ones with your mom are extra special to me. My mom was a huge baker and even sold her goodies to earn extra money when I was growing up. I remember baking with her through my adolescent and teen years (often begrudgingly) and I was hoping to have a lot of future baking time together. Unfortunately, my mom has early onset dementia, and she no longer bakes or can remember any of her recipes. Your videos with your mom are so sweet and I watch with tear filled eyes - I feel like I'm baking and spending time with my mom again. THANK YOU! ♥

I live in NC and have made greens, collard, mustard, turnip greens all my life. You only need to wash them good and chop/ slice No need to soak them add a ham hock, bacon, or salt pork( Bacon drippings if that’s all you have) . Cover with water add salt and pepper to taste and sprinkle with a tablespoonful or so of sugar. Bring to boil, then simmer until water is reduced by less than half . You will end up with what’s called Pot liquor it’s just a delicious juice that comes from the salty meat, sweet and the bit of sugar earthiness of the greens Goes perfect with a big chunk of cornbread. The cornbread recipe is Whitelily cornmeal mix to half Whitelily self rising flour, one egg and butter milk until you get the consistency you want and of course bake it in a cast-iron.

Cream cheese frosting is notoriously too soft. Next time use buttercream for the frosting in between the layers and crumb coat. It will hold everything in for you. Then use the cream cheese for the top coat. It looked great at end, nice save. 😅

I love watching you and your Mom work together! I'm always just but all my greens in the sink with cold water a vinegar and then rinse after and they are ready to go No need to put that much time in to washing them. Lol I'm a custom cake decorator, you can put those cakes in the freezer after they cool to touch for a hour or so, if your on a pinch for time, and they will decorate easier

I just replaced my attachments too. I love the stainless-steel ones. Becky a helpful hint when squeezing the lemons or even limes, peel the rind off then squeeze, you will get a lot more juice and be much easier to squeeze

Southern here! I’ve never soaked my collards in vinegar! I cook my collards in my pressure cooker, cooks in half the time and infuses the flavors in the greens more!

To add the missing lemon to cakes you could take lemon extract mix with some powdered sugar and a little water drizzle it on top of each layer before frosting.

If you freeze your collards before cooking them it will tenderize them. Add some cabbage to your collard greens when cooking and it will sweetened them some.

For the collards boil the ham hocks in water for a good hour or so, then add the collards. The collards will pick up the flavor so much better.

Definitely need bacon grease for Southern Collard Greens to sauté your onions. The instant pot does a great job with them! A little sausage, bacon or ham thrown in is delicious! Hot pepper vinegar! Yum!

I have made greens for 36 years. I don't know if they are southern or a twist of it. I just know this is how my godmom taught me. Here's a few tips from my family to your's. With each leaf, you scrub the front and back really good for bugs, dirt or any other unwanted thing/substance. Stems were for animals, composting or discarding. The groundhogs here love them. I cook my greens with smoked hamhocks and salt pork that is cut into pieces. Although she cooked greens 6 to 9 hours, I make mine in my 22 quart roaster overnight. It cooks the crunch away and they are really tender. Also, we always make cornbread with greens. They soak up some of the juice which makes them extra delicious. I make them a few times a year, but especially on Thanksgiving. 😊 Greens are a family favorite.

You can put several collard leaves together and cut like you do basil. I add alittle smoke flavoring to the greens if you don't use smoked ham hock/or turkey necks or leg.

I've been cooking greens for over 40 years and never used vinegar. If you clean them well and it takes some patience to clean them thoroughly, and cook then long enough you kill any bacteria left on them after cleaning. Collard green are bitter anyway so putting them in vinegar makes no sense to me.

Some vinegar does help with the bitterness of greens. We always make cornbread to go with them. And rutabagas are great with them also!

I’ve discovered that you get nice, clean, brownie edges with none of the beautiful crusty top disturbed when you let them cool completely in the pan. Then I use my largest, sharpest knife or a pizza cutter to slice them without that typical up and down, sawing motion. You’ll find they come out perfectly.

Hi Becky I am a cake decorator. If you ever make a cake over four layers go ahead and dial and board after the 3rd or 4th layer this will hold the weight and keep it from squishing out your cake filling. Also cream cheese frosting is really soft and not great for cakes that have a filling. There is a good for cream cheese buttercream recipe that uses vinegar and it's really good. You can find it on RU-vid. When you do a dam to hold the filling in it needs to be stiff consistancy and you need to do 2 rings 1 on top of the other. Then go along the inside of the damn with a small offset spatula dragging it from the top to the bottom ring to make a solid wall. I hope this makes sense and helps if you ever make another talk cake. These are usually called double barrel cakes. It was very pretty!

Hey, Becky and Susan! Love seeing your two playing in the kitchen together. Lil hint for cutting brownies. You can certainly use the parchment paper method and lift the brownies out for ease of cutting. But if you use a plastic knife the brownies won’t stick to it. Learned it from my mom who learned it from one of the camping buddies. ❤
