I haven't gotten to that part in the manga yet to check, but my guess is that the animators just... messed up. Then again, she isn't unemotional. There are a lot of reasons she behaves like she does (or SPOILER: did?)
To shock the audience. The point was she used her emotionless calm face as a camouflage and finally since she had been exposed she dropped her disguise and prepared to reveal her true self.
