Condenced milk contains dairy...so no vegan there...also White chocolat contains dairy....so there's no vegan there...so ot doesn't mattor if you use agar agar...because it aint vegan. There are vegan alternatives.
Good morning. Yes. Your last sentence basically tells the truth of it all. I have the full vegan version (ingredients) listed on my 100% vegan website at Gretchen’s Vegan Bakery. Using VEGAN white chocolate. VEGAN condensed milk *with a recipe for homemade coconut condensed milk for those who cannot find the canned one. This video as I explain, displays the method in detail so whether it is the vegan version or not the method remains the same *with the exception of the handling of the agar vs disgusting gelatin- as i also explained in the video. I have been wanting to make an updated video for this excluding the gelatin version altogether, since this video was filmed before i myself transitioned from an un- aware vegetarian for 10yrs to full vegan in 2016. Idk why but anything that has a marbled pattern makes me so happy. I have decor in my room that's marbled, I have a marble take sheet on my laptop, and my phone case is marbled so I LOVE that gold and red marble version!

Show-stopping is a good description. :) Who wouldn't want to eat one of those! I think the gold Luster Dust techniques add so much to the cakes. My favorite is where you mixed the gold liquid in with the red mixture.
Some day I hope I get around to trying a vegan version. It sounds like the sweetened condensed milk and white chocolate are the only things that make it non-vegan. Luckily, there are recipies for the vegan versions of both of them on RU-vid already. Thanks for these recipies, Gretchen!

I have a friend who is vegan and loves the effect, but the gelatin worried her. BTW, I was hoping you might do a tutorial on how to take recipes that are for one size pan and make them into other sizes. I have tried to do this with some (little) success for a multi tiered cake for a wedding that I have been practicing for August. Some were fine while others were not done fully. I rely on you, dear baking Goddess. (props to a fellow NJ native).

That would be so GREAT!!!! -bows to the great one lol- Also have you seen anyone else do the mirror glaze on a regular cake with either swiss/ Italian/regular buttercream? I'm not comfortable with moose yet and the jelly filling is a bit much sugar for the person that I want to do it for.
You can use the mirror on regular cakes for sure! I actually preferred the raspberry filling but I ate the gelee alone! It was like vegetarian gummy fruit snacks! LOL

WOW WOW WOW!!! This video made me subscribe! My favorite finished look was definitely the last one where you added the gold into the glaze then poured it over the mouse. Perfection! Since I don't like coffee flavored anything, would I still make the mouse the same way and just omit the coffee? Could I add Amaretto, Irish Creme Liquor, or Kahlua where the coffee was added?

That looks amazing!!! Gretchen I would have loved to see what the vegetarian version looked like on the cakes ,was there a difference in the shine or were they the same.
It looks the same. The mirror glaze gets it shine from the corn syrup in the first place and the only difference between agar and gelatin is the temperature it sets at. Agar sets more quickly and remains jelly-like at a higher temperature than gelatin.

Hey Gretchen! Thanks for the amazing recipe! 💕 I just have one little question. Is it possible that the measurement of the Agar powder for the Raspberry Gelee is wrong? I followed your recipe to a T and it didn't set at all. I then added a whole lot more for it to set. I've worked with Agar before and I've never had this problem. I'm just curious! But anyway, great recipe 👍🏻😀

Hey chef thnx for all your vids. I just wanted to ask a question fer ya. Ok i use the same vanilla extracts u do. Nelson-massey brand. They are expensive as heck. I was gonna make my own i know they don't go bad but how long should i age them? Thnx ahead of time.... What would be the best alchahol to use? How many vanilla beans is best to use in say a half gallon masson jar?or may do them by the quart jars. I'm saving my bottles my extracts come in as well to use when i wanna put the finished product in something.

Hey Gretchen, I followed your gelee recipe only I used cherry puree. I have my tiny domes in the freezer and they won't freeze. They are super sticky. They taste amazing. Any thoughts as to why they won't freeze?

Saw your video on mirror glaze for cakes. Question: I am a vegetarian Can't get agar agar anywhere and I am trying to put it together by nov 7th. So kind of last min. So the only other option seems vegetarian version of Jello for example Bakol Raspberry jel. What kind of changes will I have to make to get similar results? The cake is white chocolate raspberry .I don't want it to be too sweet either. Can I omit sugar as condensed milk and white choloates are sweet anyways plus the flavored jel has sugar in it too Thanks for your help
