The mutton fry they gave you is preboiled and than deep fried in oil that’s not authentic at all but the real one is cooked in mustard oil and the meat is cut in very small sizes and you just put the meat on the mustard oil after heating the oil and add salt and hing and cook in slow flame till the meat is tender than add jeera powder and garlic ginger paste fry some more time than add thinly sliced onion and fry for another 15-20 minutes till the onions are carmalized.

Chef make this black lentil in an iron vessel boil two cup of split black lentil with salt, an inch of ginger crushed, some asafoetida and boil till it’s cooked and smashed the lentil after it’s cooked than heat some ghee (clarified butter) and add jimbu (Allium hypsistum) and heat it till it’s burnt than add in the lentil and serve
