I made these tart cases today Stephanie. SUPERB pastry. Thank you so much. I will fill with lemon curd/butter just before serving so they stay insanely crisp. Mine were not pristine looking like yours but they are still fabulous.
I made the cream cheese filling yesterday and chilled it it's the tastiest filling I've made! I have just made the pastry crust and refrigerated it first because mine is very soft but baked a few sample in my 6-hole muffin pan and OMG! it's melt-in-my-mouth heaven! Thanks so much Stephanie! the cornstarch really makes a difference. I made this days ahead for my son's 30th bday on Tuesday.
You are a wonderful teacher and I really appreciate the way you give both the Imperial and Metric measurements/weights. It's so helpful. Mesmerising lessons in the kitchen!
This recipe knocks it out of the ballpark. These are so delicious. I think I’m even going to try a lemon curd next time I make them. The recipe does make a lot, and there was no need to store them, because they go fast. I admit, that I won’t admit how many I ate myself, but the number is higher than one.
Love your tutorials!! But as a suggestion, perhaps you could give a caption in your video as you mention the ingredients. So it's easier to follow especially by those whose mother tongue is not English :D

Totally on the same page with this recipe. Lately have been making a lot of tarts. Can bake a bunch of shells when it's cool at night. Next day make, creams, and puddings, or fruit jam. I'm going in the kitchen now to make these with strawberries, and make some with homemade chocolate pudding. Shortbread is my favorite for desserts and snacks as they pair well with a bunch of toppings, fillings, and fruit.

@@Saucyakld That sounds amazing! I've always wanted an apricot tree and an avocado tree but I'm definitely going to have to add lemons and limes to the list. We do, however, have over 20 persimmon trees. I just need to learn how to use persimmon fruit!

Stephanie I miss baking. We are redoing our kitchen and it’s been about 3 weeks. We are almost there. Just waiting on the counter tops (we ordered granite that almost looks like yours ). After it’s done I will bake , bake and bake !

Is it possible to make this recipe using a cupcake pan (12) or would the serving size be too rich? I also am a huge fan of Joy of Baking & her recipes are the ONLY ones which I have successes.
The crusts were tasty but fell apart as I removed them from the pan. Do you have any suggestions to fix this? I followed the recipe exactly... thank you!
A nonstick pan works really well, or just make sure you really butter or spray the muffin cups with a non stick spray. And let the shortbread cool completely in the pan before removing them.
I did exactly as you suggested. I will try again by using more non stick spray in the muffin tins. Thank you for your recipes! Your recipes are always the best!
We are using the shortbread to make tart shells. Therefore you don't want to use baking powder in the shortbread. It would cause it to rise too much in the oven.
