~Shredded Chicken and Jellyfish Salad~ Recipe (Keto, Low-Carb)

The method demonstrated in the video allows you to make chicken juice at the same time. This chicken juice can be used directly as a seasoning in other dishes, or it can be diluted to substitute for clear chicken broth.
Ingredients (2 Servings):
A) Chicken Thighs - 3 (please see (i))
B) Jellyfish Strips - 340g
C) Carrot Strips - 150g
D) Cucumber Strips - ~150g
E) Roasted Sesame - appropriate
F) Salt - appropriate
G) Sesame Oil - appropriate
H) Erythritol - appropriate (please see (ii))
About the ingredients:
i) In general, chicken breasts are used to make shredded chicken. However, chicken thighs are used here mainly because chicken thighs are succulent that the finished dish will taste better, and the chicken juice can be made at the same time. This chicken juice can be used to season other dishes or diluted to substitute for clear chicken broth.
ii) It can be replaced by any keto sweetener of your choice
Steps:
1) Debone the Chicken Thighs.
2) Boil chicken bones in boiling water for 3 minutes.
3) Put the Chicken Thigh meats and chicken bones into a steamer plate and steam for 45 minutes.
4) Pick up the Chicken Thigh meats and chicken bones and set aside.
[The followings are the steps for making chicken juice, you can skip it if you don’t need it]
5) Pour the chicken juice into a bowl through a sieve.
6) After cooling, cover the bowl with cling film and place it in the refrigerator for at least 3 hours.
7) After taking it out of the refrigerator, use a spoon to remove the solidified chicken fat, and then use kitchen paper to remove the fat from the side of the bowl.
8) Cover the bowl with cling film and store it in the refrigerator for future use.

9) Tear off the skin of the Chicken Thighs with your hands.
10) Then, tear off the chicken meat into fine pieces with your hands
11) Add Jellyfish Strips and Shredded Chicken, as well as an appropriate amount of Sesame Oil, Salt and Erythritol into the mixing bowl, and mix them well.
12) Place the mixed Shredded Chicken and Jellyfish on a plate.
13) Add Carrot Strips and Cucumber Strips as accompaniments.
