This sounds like if Simon was trying to cover this to capitalize off of the hype around Ice King and Fiona and Cake. While at first it is just simple advertising, soon it starts giving him flashbacks to what the crown did to him. Worse then flubbing his lines he's shakily crumbling while trying to keep it together and in the process making himself feel just like how he did when he was just trying to keep both him and Marceline safe.

I wish we had an official uninterrupted version of this song. It’s so popular, it seems crazy to me that we don’t have that yet. Songs like “Part of the Madness” from Fionna and Cake got an uninterrupted version by Rebecca sugar a week or two after the last episode aired, so I really don’t get why wouldn’t she do the same for “remember you”, which she also wrote
