Pumpkins and squash are very high in vitamin A. The stronger the color of the flesh, the higher the level of carotenoids (antioxidants). They also contain good amount of Vitamin C, vitamin E, fibre and potassium.
This recipe yields a big batch. They keep well in the freezer for 3 months in airtight containers.

Ingredients:
1 kg pumpkin flesh
1 large red onion
ginger (as you like)
6-8 garlic cloves
3 tbsp extra virgin olive oil
1 can of white beans ( I use cannellini beans)
1,5 L water
2 tbsp vegetable stocks
2 tsp salt
1,5 tsp turmeric
black pepper
Topping:
roasted pumpkin seeds
light cream ( I use canned coconut milk)
