Simple Egg Fried Rice

Ingredients:
1/4 cup oil
1/2 cup spring onion whites, chopped
4-5 garlic cloves, chopped
1 cup shredded carrot
1 bell pepper, chopped
1 tbsp dark soy sauce
1 tbsp salt
2 cups shredded cabbage
500 grams boiled rice
1 tbsp oil
2 eggs
1 tbsp crushed black pepper
1 tbsp dark soy sauce
2 tbsp vinegar
Spring onion greens, for garnish
Instructions:
Sauté Vegetables:
Heat 1/4 cup oil in a pan over medium heat.
Add 1/2 cup spring onion whites and stir fry for 1 minute.
Add 4-5 chopped garlic cloves and fry for 1 minute.
Add 1 cup shredded carrot and cook for 2 minutes.
Add 1 chopped bell pepper and 1 tbsp dark soy sauce, and cook for 1 minute.
Add 1 tbsp salt and cook for 1 minute.
Add 2 cups shredded cabbage and cook for 2 minutes.
Cook Rice:
Add 500 grams boiled rice to the vegetable mixture and stir well to combine.
Prepare Eggs:
In a separate pan, heat 1 tbsp oil.
Add 2 eggs, stir, and cook for 3 minutes until scrambled.
Combine and Season:
Add the scrambled eggs to the rice mixture.
Add 1 tbsp crushed black pepper, 1 tbsp dark soy sauce, and 2 tbsp vinegar.
Cook for an additional 5 minutes, stirring to mix everything well.
Garnish and Serve:
Garnish with spring onion greens.
Serve hot.
