14 day Icicle Sweet Pickle Recipe
-2 gallons sliced cucumbers
-1 gallon water
-2 cups of pickling salt (canning or plain salt)
-1 Tbsp Alum
-12 cups white vinegar
-14 cups sugar
-2 Tbsp pickling spice
Day 1-7
Place your sliced cucumbers (chips or spears) into ceramic crock, glass jars, or ceramic mixing bowls (do not use metal). In a large pot heat 1 gallon of water, add 2 cups pickling salt. Bring to a boil and put over cucumbers until they are completely covered. Let cucumbers sit untouched for 5-7 days (7days ideal).
Day 8
Drain the cucumbers. cover with clean boiling water, let sit 24 hours
Day 9
Drain the cucumbers. Add 1 Tbsp Alum to 1 gallon of water, stir to dissolve, bring to a boil. Pour the alum water over cucumbers. Let them sit for another 24 hours.
Day 10
Drain the alum water. Rinse cucumbers well. Prepare pickling syrup. Combine vinegar, sugar, and pickling spice. Bring to a boil. Pour over cucumbers.
Day 11
Drain syrup into a pot, bring to a boil pour back over cucumbers.
Day 12
Drain syrup into a pot, bring to a boil pour back over cucumbers.
Day 13
Drain syrup into a pot, bring to a boil pour back over cucumbers.
Day 14
Prepare and sterilize jars, lids and rings. Drain syrup into a pot. Add pickles to jars, feel free to try them at this point! Bring syrup to a rolling boil, ladle syrup over pickles. Apply lid and ring. If you don't have enough syrup to cover all the pickles, just place those jars in the fridge for snacking now!
It is recommended to water bath these pickles for 20 minutes. Enjoy!
Remember the longer they sit the better they are!
