▷Raw Chocolate Ingredients
Chocolate 100g(2 chocolate bars)
※Meiji Dark Chocolate
Milk 50g
Pure cacao powder appropriate amount
Silver dragees
◎2 style used for raw chocolate
・15 x 10cm aluminum tray purchased from Seria … Approx. 18 pieces can be made when cut at
about 2.4 x 2cm
・Gold and silver chocolate cups purchased at Seria(3.4×1.5cm) … Approx. 13 pcs can be
made
▶Instructions
※Place the wrap on the aluminum tray (15x10cm) purchased at Seria
1. Crack the chocolate then put it in a bowl, place it over hot water, melt around 70% then remove.
2. Put the milk in a saucepan, heat it over a medium heat, mix with a rubber spatula, and add it to ①
when it boils
3. Mix ② well from the center with a whipper and mix well until it is turns glossy
4. Pour ③ on the tray covered with plastic wrap, wrap it tightly and cool it in a refrigerator for at least
4 hours.
5. Peel off the wrap and warm the kitchen knife with hot water and cut it to your desired size
※This time one piece is around 2.4 x 2cm
6. Sprinkle pure cocoa powder on ⑤. The simple raw chocolate made with milk is now complete.
◎Another way to make raw chocolate
Make the raw chocolate in the same way, but then put the raw chocolate in a piping bag, squeeze it
into a chocolate cup, place silver dragees on top then cool it in a refrigerator for 4 hours to harden.
