My mom taught me to wash them, cut it in half lengthwise, scrape out the center, then cut the entire thing into long, thin wedges. Either serve and eat as is, or cut off the rind (very flexible) and the chop the strips into bite size pieces. Unless using a melon baller- then you just scoop out the balls after you scrape the seeds.
