This looks really great. I can’t find a comb with uneven pattern anywhere 😢 I don’t like when it’s completely even. Does anyone know where to buy one like hers?
This cake is beautiful! It’s my inspiration for a wedding cake I’m making for family. How soon would you make this cake before event AND what’s the process of taking it out of the fridge for said event?
I am sorry I just saw your question:( if it isn't too late, I usually bake 3 days ahead and spend the next 2 days filling, Crumbcoating, and final decorating. That is why I simple syrup. Keeps the cakes from drying. And I am never doing just one wedding per week, so those 3 days are spent making 3+ wedding cakes. I would take it out of the fridge 2 to 4 hours prior to serving.

You know what? As I was uploading the video I was thinking that I have not explained that. Good catch! So there is still the cardboard cake board underneath. When I do my final coat, I like to put them on the plastic boards. That way I can hide the cardboard one with the frosting. I add about 1/4 frosting past the cardboard. Once the cake firms up in the fridge for 20 minutes I can take the entire cake off the plastic board and there is no cardboard showing. Does that make sense? It may be easier to show then explain. I need to do that;) As for the buttercream, I make an American buttercream. There is actually a tutorial already posted that shows that whole process and recipe. Please check out my channel to see it;)
Also I am wondering if you maybe saw the board on the bottom when I picked them up off the white plastic? If so, that was the bottom of the white cardboard one. They are only white on the top.
Clever using that comb. Looking at the cake I thought maybe you used a spatula and spun the cake to get that result. Also, like the height of the cake it's so tall with 3 layers.
I would love to share but this cake was done at my job and I don't want to step on my bosses toes. We do use a lot of my recipes there, so maybe someday I can share them;)

Beautiful cake Mary, thank you for sharing. Is there a reason why you bake in layers instead of a deep cake? Also, how tall is each layer and how tall does each tier come out at approximately. Thank you. I've recently discovered you (subscribed obvs) and love your work.
Welcome!!! I actually do have the taller pans too, but my cakes dont seem to come out as good with them. THey bake too slow towards the middle and don't rise correctly. SO now I just use the 2" pans and more of them. So they come out about 2 1/2" in the middle. once leveled, each tier is approximately 5-5 1/2" tall with 3 layers of cake and filling.
Probably depends on who you ask;) My husband and kids...no. My coworkers and neices...yes;) I have even told my husband that some people find me funny 😉

I've just come across your video. What a brilliant idea with the straws using them to ease down the next tier! Most other tutorials just use a spatula and practically drop them on. I'm making my first wedding cake exactly like yours this week do you use a central dowel may I ask. You've given me the confidence I needed many thanks x
Well I am so glad this is helping you:) it works great. I do sometimes use a central dowel after I have stacked the cakes. I sharpen it like a pencil and push it in that way. You can even use a hammer if you need a little extra push to get it in. Just cut the dowel a little shorter then the cake so that it isn't sticking out the top and cover the hole with buttercream or fondant. Also, I always make sure to chill the tiers before assembling them so they don't get messed up so easy.

Why is there holes in the center of the smaller cakes?? Why not put a nice border around the bottom of each layer instead of using a finger to smooth and cover the small gaps?? Doesn't make any sense!!
