Singkong Mustofa | Spicy Fried Shredded Cassava
I used to make this type of recipe with potatoes. But this time, I want to make a more economical version, so I substitute cassava for the potatoes. And it turned out to be as great as the Potato version.

Ingredient
* 3 kg of Cassava;
* 250 gr Peanuts, fried until cooked - optional,
^^ Replaceable with dry fried anchovies, suit your taste;
* 1 Liter Oil for frying;
* 6 tbsp Tamarind water,
^^ made from 3 eyes of Tamarind soaked in hot water, then take its water;
* 250 gr or about 16 tablespoons Sugar;
* 6 gr or about 1 tsp Fine Salt;
* 12 gr or about 2 tsp Broth Powder
* 3 Bay Leaves;
* 6 tbsp Cooking Oil.
Ground Spies
* 12 cloves of Garlic;
* 6 cloves of Shallots;
* 100 to 130 gr or about 32 to 45 curly red Chilies, to taste;
* 10 pieces of Cayenne Pepper, to taste;
* 1 segment of Galangal, optional;
* 1 Lemongrass, take its white part - optional;
* 150 ml of boiled water to help the blender/chopper work better.
Additional Notes
// Use cassava that is of the proper age, not too young or too old. When you cut it, make sure it’s not too tough. If the cassava is too old, it will become hard when fried, so please use soft cassava varieties.
// Cassava can be substituted for potatoes; if so, the potatoes are simply peeled, washed until the water is clear, and fried dry.
