Pears make a great substitute for sugar in cakes and sweet breads. They have not been available in store cans for almost 2 years. That's why I started canning apples in chunks. You're very privileged if you have access to a pear tree. I graduated college when I was 55. My daughter and I attended the same college at the same time. I stopped peeling apples years ago when I make apple pies. It makes no difference in the flavor and the peels don't stick to the roof of the mouth. I don't peel any fruit when I waterbath can.

I called my extension office and they said it was just aesthetics with or without the skins left on the pears. So it is just a matter of choice 🙂

Thank you so much for sharing this! It is so helpful. I love that you were so honest with the turkey roaster. I really enjoy watching your canning adventures. I remember watching my grandma can peaches and apricots when I was a kid but she passed away before I was old enough to learn from her. Watching you makes me feel much more comfortable canning on my own.♥️

My pear tree gave us an abundance of pears this year and I canned pears for the first time. I promised myself to never can pears again(what a chore)...well after this lesson I will now actually look forward to it next year.

Ditto! Now I won’t bother the few neighbors I know that can and offer them All the rest of the pears! I Love to share with them, but I was giving all the rest away this year as we have 4 loaded trees. Now I will can a batch for us as well and still have plenty to share. Thank you Sweet Sisters!

How much fun for you ladies! I have to tell a story of my pears this summer. I had never done pears, so I dutifully washed, peeled and cored. They were gorgeous white Bartletts. I put them in the pressure canner, so white! When they were done, I pulled them out and thought what happened?! The pears and juice were all the lovely color of hot pink. I told them I didn't include red hots with them and asked why they changed. Looked it up online and during their big growth in August, if it's really hot and arid, pears will turn pink in the canning process. They are so pretty and delicious, I almost hate to eat them. But they gave it their all! I still laugh at the result. Thanks for all you do! You've really helped my confidence!

I loved this video. Years ago when my children were complaining about peeling 300# of pears, I told them that if they would eat canned pears with the peels on without complaining, they wouldn't have to peel ever again. Thus husband and children and myself have never eaten a peeled pear again and I've canned many hundreds of pounds of pears over the years.

The reason why USDA doesn't like you canning with the skins on is because if there is harmful bacteria or fungi it would be between the skin and the flesh, making the canning process ineffective in killing all of that bacteria or fungi. This is why they recommend cooking in advance and/or peeling everything. There are other anaerobic (thriving without oxygen) bacteria besides botulism that can make one sick, as well. It's been too long for me to remember them, but if you get a microbiology textbook, it should be an easy find.

You can use pear leftovers, and skins if you decide to peal them, to make a lovely pear vinegar. It's wonderful for salads with blue cheeses. Oh, and when it comes to canning food in jars my favourite trick is to cover the jar with thick kitchen cling film after filling it than putting the lid and cutting excess. Science I started doing this decades ago not even one of my preserves went bad.

I use terry wristbands when processing juicy foods. Shove them in the washer when you’re done. I hated the juice running down my arms! Got mine from Amazon 😊

I guess I will be looking for some pears when I go to WinCo tomorrow. Peeling the pears has been a giant deterrent to my canning pears for my shelves.

Pears had been the only successful harvest that year here. We peel them with a potato peeler. If you're using gloves fold the cuffs so the juice won't run over your arms. It's also good if you're cleaning windows or the oven. We canned a mix of pear slices and plums in elderberry-water-sugar sauce.

Pears can have thick and raw skins, depending of the kind of pear, that might be the reason why they recommend peeling pears.

Let me just say this, both you and Camille look fabulous! I had canned pears and peaches, and I was going to make a peach cobbler. However, my husband opened up the pears. So I ended up making a pear cobbler and it was absolutely delicious. Thanks for sharing ladies!

Thank you both so much! I read some of the comments that people use the pears as sweeteners for cakes, etc. I made a ton of roasted pear sauce for our grandbabies and canned it but removing the peelings just about killed me. I will can the rest of my tree after this video and am Thankful to have your video to guide me as I will be leaving the scrubbed peels on the pears! Thank you and May God Bless You Both!

Try adding candies to your syrups. Red hots( cinnamon imperials), jolly ranchers, any hard candy, that you like the flavor of.

I have never done that when canning my pears. What a time saver! I add allspice berries and small pieces of cinnamon when I can my pears. 🍐

It was delightful seeing the two of you in the kitchen having fun, despite the drawbacks. And to think that I was thrilled to read that nectarines didn't have to be peeled when canned! I have put pears on my list! I doubt I'll ever see $.89/pound, though. Thank you for sharing your insights and especially the info on the roaster not getting up to temp. Jim, I hope at least one of those jars has your name on it. Great camera work on capturing those bubbles.

We LOVE homemade canned pears AND pear sauce. We don't like the skins and make the efforts. But the skin and core cooked down in water make excellent pear juice.

My mother in law taught me how to can pears from her pear tree. We also made spiced pear honey jam. We always left the peel on. USDA doesn’t know everything. Thanks for taking the risk.

I grew up with three brothers and unfortunately I lost my youngest and most favorite 37 years ago and my two remaining brothers gave me the most loving and caring sisters in law . Seeing you two together reminds me of the wonderful relationship between siblings by blood and choice.

I dehydrate pears with skins on, last year planted the Crimson pear, got one pear this year, hopefully more next year. When I get enough will try to can.

I learned years ago to take the skins off like peaches. You use olaytex gloves.

I don’t mind canning pears. I peel mine with a serrated peeler right into the jar with a little hot syrup already in it. I fill the jar with pears, then syrup, lid and ring and put it in the canner. Fill the canner and process. I also have a tool that is supposed to be used for clay sculpting. It has a handle and a pear shaped blade. With the skinny end you can cut the stem out and with the rounder end you can cut the core out, slick as a whistle!

Love caramelized pear butter. Yes, very thing gets sticky but when you sitting down with tea or coffee with the pear butter on toast! It makes a sticky mess ok with!

I’ve only canned pears twice and both times left the skins on as that’s how I was shown. They are perfectly fine and delicious! Glad you enjoyed them! I’m not in US so didn’t realise they were recommended to be peeled!

Like most crock pots, electric Roasters do not have heating elements on the bottom........only around the sides. Therefore, they would not be good for steam canning. However, they would be fine for waterbath canning

Fascinating. I have been waterbath canning in my 28 qt turkey roaster for decades. But I have never tried steam canning in it. My brand is Hamilton Beach. I do have to crank it up to 450* to get the rolling boil but it does get there in about 20 minutes. I usually turn it down to about 375-400* depending on the number of pints to maintain the boil over the top of jars. I quit peeling fruit 7 or 8 years ago, when I had a badly sprained ankle. A friend brought me 2 5gallon buckets of fruit from her trees. The crimson pears look fabulous.

Great video how fun. My sister visited me during our pear harvest and she helped me can 40 quarts of pears in light syrup and it was so much fun to have her help in the kitchen.

I love pears and do them whenever I can get them at a reasonable price, even though they're very messy. I watch Jessica from Three Rivers Homestead and she doesn't peel her pears but I've never been game but I'll give it a go after seeing you do it! Thank you both! 💜

A wonderful neighbor has a pear tree and gave me a lug full. She was also kind enough to give me her recipe for Vanilla Pears. SO GOOD! I’m very tight fisted with my canned pears, lol

Have you tried steam canning in your pressure cooker? I like to use my 23 qt Presto for this. I start my timer as soon as I get a steady vent of steam coming up (you never add the weight, because you're not trying to build pressure). It works perfectly, and you don't have to deal with a heavy pot of water.

Pam, I have had the desire to can for a handful of years now, yet I didn't have anyone I knew that could teach me, and Normally I wouldn't trust random videos on the internet for something so important to safety. Then, recently I found your channel and that all changed. The USDA guidelines are very important to you, and you adhere to them. That is where you differ than most other people on here creating "informative" videos; This makes me trust you. With your videos along with some other research of my own I have done I am going to be canning my first thing this weekend- I will be doing salsa. Any tips would be awesome, thanks so much for your videos!

Pears, my favorite fruit. One of the first thing I canned was pear honey. Delicious. That was 43 or 44 years ago.
