Boy did I get a lot of tips from you this time! The bacon fat in mashed potatoes ! the regular olive oil for baking ! I am dairy free, gluten free and minimal eggs - for baking only. Thank you , thank you !!!!!

Absolutely love these cooking videos (even though they make me feel like a complete slug and underachiever!). I never in a million years thought of saving roast or ground beef drippings or anything like that, but I have taken your advice and now have a jar of hamburger fat/drippings in the fridge and trying to figure out what to do with that. I use bacon grease religiously, but you have so many wonderful ideas and uses for all of these! I'm always so impressed!

Thank you so much for your inspiring videos. I’m a stay at home mom of three toddlers, started homeschooling this year, and I love canning and learning new things on how to be more self-sufficient. Your preservation everyday in August opened my eyes to so many new ideas I hadn’t thought of. I appreciate the values and choices you are making in raising your kids to love the LORD and life a rich and full life. I’m wondering if there is any way to get your recipes for pizza dough, fruit cobbler, and applesauce loaf in a different way as I don’t have instagram. Perhaps if I emailed you? Thank you so much!

I give the kids a calcium supplement - a whole bone powder - if we don't eat some small fish, leafy greens, or other calcium-rich food that day.

In Europe they sell in the apothecary fruit based calcium as a treatment for allergies. I didn't realize fruit had calcium, but it is worth a Google!

I don't have any known food allergies, however I have many other environmental allergies, I love the outdoors, & I'm allergic to every tree there is, grass, & many other. I developed them as an adult. If the grass is being cut, I have to stay in until it settles about 2 days. T I can't be around someone that has cut the grass until they change their clothes, & take a shower. It's horrible, so I understand. Looking for holistic to help, so far only local honey have I found.

I've seen several sites that say to take egg shells rinse them put them in the oven to dry out crush them and use them as a supplement apparently they are full of calcium. Good use of leftover egg shells. Anna In Ohio

I love that you're showing your meals with ingredients, that gives me some great ideas especially since I have three Grandbabies here for these first two weeks of the challenge. The kids are a little bored with regular oatmeal so I added a dab of currant preserves I had in the fridge. They loved it and I'll use the leftover oatmeal to make muffins for snack.

One long video works for me! But whatever is easiest for you. And it is cold in SE Ohio too. My husband fell off ladder last Sunday afternoon after church. God is so good. No broken bones. He landed on his head first and got a nasty goose egg above his left eye. The minor bleeding in his brain has resolved. Two days in hospital. So glad he is home.

Hi Jessica! I've been a lurker on your social media platforms for about a year, but this is my first comment. I have a lot I could say, but to quickly sum it up, THANK YOU for sharing what you do and documenting it for us. I so appreciate your content and the way you specifically share it! I personally enjoy shorter videos broken up throughout the week because they're easier to watch while doing dishes or folding laundry, but that's just my preference. I'd say do whatever is easiest for you. =) I also had a question- as someone who is also currently eating a diet similar to yours (gluten free and low sugar) for health reasons, what do you eat when gluten is served as the main course at your home, like on pizza nights? I also see that many of your breakfasts contain gluten for your kids, but I can't help wondering what YOU eat because I'm in a similar boat. I'd love a quick answer or even eventually a video that compares what you eat to what your kids eat for meals! Thanks again!

I love the old fashion mill too. I have the one my mom and grandma used. I loved stirring it around when making applesauce or tomato juice for canning. Still use it.

My mother used one of those sieves whom making applesauce. She would put one kid on the sieve and another kid on the ricer to cut down on the time needed. I’ve never had a buckwheat porridge. I love buckwheat pancakes. I love that you create some things from leftovers that you acknowledge don’t look wonderful that tastes great. My boys used to call those type of dishes as “gook” which they loved. You never knew exactly what was going to be in it.

2 things I'm from Maryland and we put Old Bay on literally everything! It's great on potatoes and on chicken. And then freeze dried homemade marshmallow sounds amazing!!!

Start green bean seeds in pots & then transplant out when bout 3 inches or so tall. I never direct sew beans to avoid seeds getting eaten.

Your mill for apple sauce looks amazing! I also love my hand cranked milll (different model) but since a shoulder injury I get my husband to help me. I open kettle like my mom taught me (>30 years ago) and is common in Germany.

You've given me some great ideas! Thank you. Oh, I'm in Maryland so Old Bay is a staple here. I love it on corn, homemade potato chips, any egg dish, and popcorn. I can't eat corn without it and I sprinkle it on the chips when I remove them from the oil. You can find crab salsa here and Old Bay is in that too. Delicious!

We have a daughter that is dairy free and I've found that avocado slices on top off her pizza give a nice texture and creaminess that she misses from cheese on top. She's also not a huge fan of vegan cheese, the one meal that I make with vegan cheese that she really likes is scalloped potatoes (I use almond milk for the rue. 😀

I live alone but I’m taking the challenge. I heard about it on Becky’s Acre Home stead. I was going through my pantry and reorganizing it, but found some expired cans. I don’t eat tuna much so last night I made a can with mayo and cut up dill and garlic pickles. Had some pretzel crackers and it was delicious. Today I hope to finish it. I’ve done this kind of thing on my own for a week or two but never this long. I’m so excited on how I’m going to do. ❤

I love oatmeal :-) I use steel-cut oats that I buy from Aldi's and I cook enough for the whole week at one time. I cook it down so that it's thick enough to set up in the fridge. I put cinnamon, a small am't of cloves, and 2 tsps. vanilla in as I finish cooking it. Once it's cooled down, I cut it into portion sizes for the week. I don't make mine with milk, as some do-just water. Each morning I just microwave a portion and on goes my milk. It's SO yummy!! It might be makeable (is that a word lol?) in the oven, but I don't have the use of my oven at the morning. Anyway, I just love it. I might try buckwheat sometime. Your videos are a blessing to me!

I got a planner like the one you shared and it's been helping with my memory problems and running my house with 4 little people. I didn't know I needed a planner that ran the days lengthwise across the page and the week progressing down until you mentioned it. Never going back!

Just a thought....do your kids like cooked elbow noodles? When I make chili, we always start with some cooked elbow noodles with chili added on top. Kind of like a hamburger helper, but much better. When I was a kid, we had 3 apple trees in our yard. Every weekend and many evenings, we would sit around the kitchen table. Each of us had a few layers of newspaper on the table, and rmed with a good paring knife. My Mom never canned anything, so we filled hundreds of containers with applesauce that went into our freezer. We never added sugar or cinnamon until we pulled it out of the freezer to re-heat for dinner. Guess how we processed all of those apples??? Yup, that same cone mill. Of course I bought one after I got married 42 years ago, but somehow when we moved to Texas 32 years ago, I've lost the wooden mallet. Can't bring myself to get rid of the cone sieve and frame, because I know I'll find the mallet as soon as I do. Really enjoy watching your videos and your lovely family. Sarah (Living Home Traditions) mentioned you many times while she would do the Everything counts challenge.

Just an FYI as a single person household. I drain bacon grease into a small Pyrex ramican until I’ve worked through a pound and store in the fridge. Then I spoon it by tablespoon fulls once it’s set up and store it in the freezer. When cooking anything I can reach in the freezer and pull out a knob (about 1T) to cook with. When the little 2 cup freezer container is full I start setting up a new one so always using the older first. Just a thought. Enjoy all your videos.

I always find it interesting that people nowadays need challenges like this to do what has been done in my family for generations. Meaning, use items from your pantry, either store bought or home grown, instead of shopping for groceries daily or weekly. I grew up in a home where my mother only shopped once a month. She managed to feed 8 children, plus friends of ours, tasty and nutritional meals. Most items were home grown some store bought. Only thing we ever purchased every few days was fresh milk from a local farmer. I myself carried on this practice. I've been married 41 years and about the only time I run to the store during the month is for milk or items for specialty recipes occasionally. It's good to see people are getting back to common sense practices again.

As an idea - In a previous video you showed your food menu for the week in your diary. Do you have one during the pantry challenge? If you do it might be interesting to see what you had planned and what you actually cooked as it might help someone to show that things change for many different reasons and that is ok. I sort of stumbled across your site during the summer just before your #everybitcountschallenge. My husband & I have been married for 50 yrs. We have been gardening all of our married life. I love your ways. Thank you for your precious time. A way we use Old bay is use it as a seasoning for our fresh salsa. Add beans and corn it IS AMAZING. ☮️🙏🤗

I am from Ohio too. Saw the Longaberger recipe card and knew you had to be from Ohio. I live close to the big basket now and went to school in Dresden. Thanks for sharing all these wonderful meals

I love seeing what you make and how. Thank you so much for sharing! I've been doing the challenge but haven't posted a single pic :( We've been so sick for the past 2 weeks, maybe I'll start getting some posts done. And as far as how you do the challenge vlog, you do what works and is convenient for you. You are so busy, I just feel very blessed to get to "step" into your home with you and your family and share life from time to time.

I have a food mill just like that. It was my Mom's. I now use it when I'm canning. I like the way you cook. Putting things together to make a meal that's good and healthy.

I enjoy watching your creative ideas on using foods. We have something at our house that we haul restaurant day which is when I take all of the leftover food out of the refrigerator and everyone picks what they want for the meal.

My sons came for Sunday dinner today. I haven't been to the grocery store since 12/23, and we are eating well. Today I made homemade garlic rolls with homemade stuffed shells (I bought premade pasta) and jarred sauce purchased who knows how long ago. I had enough shells for two baking dishes, so we did one pan with ground pork and alfredo sauce and one with ground beef and marinara sauce. I asked what veggies they wanted, and they opted for the 1/2 pint of leftover pickled beets from my frig and the 1/2 pint of leftover pickled banana peppers from my frig as well. I packaged up 6 additional servings of the pasta for the freezer. As a special ed teacher, I know I won't come home from work and cook, so I constantly keep a rotation of planned ahead meals in single servings in the freezer. I also made a batch of homemade bagels that I can take one daily for my breakfast, as my school is a good 45 minutes from home. If I eat before I leave home, I'm starving all day long. I do need to make a batch of soup this week, but I may just add odds and ends to the tag end of a beef roast that's in the frig and call that soup. I take homemade soup for lunch every day - I just eat a variety of soups.

My family and I really enjoy using leftover (plain) rice for a morning hot cereal, as an alternative to oatmeal. I add milk to the leftover rice along with chia seeds, cinnamon or pumpkin spice, raisins and diced apples or Asian pears, maple syrup or honey. I usually prep it while cleaning up from dinner. Next morning I just have heat it up, and add more hot milk, and toasted nuts, for a little crunchy treat. It’s also so good with any nut milk, as well. I’ve yet to ever have any leftovers, because everyone loves it!

Just an FYI, rice makes an fantastic breakfast cereal of sorts. My Granny used to make it in the mornings by adding more water than you usually do, and cooking it slower, kind of like steel cut oats. Then when it is done and warm and creamy, kind of gooey, we would add in any fruits, cinnamon, sugar or honey, anything to sweeten it a bit. Also loved adding in a little cream to just make my bowl even creamier. You can also do this with leftover rice. She would just add rice, milk, and whatever seasonings,cinnamon,etc to a pot and warm it through. It is delicious!! I love how long you make your videos. You really are an inspiration!

While we don’t harvest and preserve our food, I do buy in bulk and shop sales, so I also end up with pantry and freezers full of things that need to be used up and older items rotated out. I was so glad I heard about your challenge, and channel, from another vlogger!! In addition to having a “no eat out” month, we’re trying a low/no spend month and simply use what we have, with few exceptions. It’s a little more work, but so worth it!

Great video, thank you for taking so much trouble with it, it is really helpful. In the Uk Shepherd's pie is made with minced lamb and Cottage Pie is made with minced beef. Without any potato topping it is called Savoury Mince. One thing I love with leftover rice is Egg Fried Rice- whisked eggs, rice, shrimp and chopped veggies- bell peppers, green onions and sweetcorn. I also add some cacoa powder to chili- it makes it a bit richer and darker although you do not know it is in there. LOVE the applesauce- I will definitely look out for a conical mill/sieve!

Thank you for sharing your pantry challenge meals! A trick I did for frequently used recipes, especially those my kids used was to keep them in pocket pages. That way spills on pocket pages wipe away without damage to the cards. Which I kept in a binder 😉 hope this idea will bless you or other reading this comment.

A tip for the boys for making pizza: if you spread out the dough directly on the tin it will shrink back during baking, spread it on the table top with a rolling pin or using just hands to the size of the baking tray and transfer it onto it. You can dilute tomato paste with a little bit of water or olive oil, it will spread more easily. Great work guys!

We’re quite traditional in our family even though we don’t make our own minced meat. We have a roast on Sunday then a mince dish on Monday and Friday is fish and chips night. We then Wednesday we usually have a casserole or something that’s meat with vegetables, Tuesday and Thursday are pasta and rice finishing with something easy on a Saturday night like hotdogs, pizza something like that! Watching this 2 years later and wondering if you’ve now finally got through that beet kraut? 😂

We want to add a steer or a couple pigs to our homestead but have no trailer. Another homestead family near Bluffton (Ohio) is considering starting an at home butcher service. They would have a refrigerated trailer and butcher on your homestead. If you’re interested I’ll let you know if and when they do this.
