slap and fold technique 

Slap, Stretch & Fold I get the stretch I get the fold But what does the slap achieve? Is it just to get the dough to stick to the worktop so the stretch is easier? Or does the physical shock of the slap (dough hitting the counter) actually have an chemical affect on the dough? Thank you for any advice
