Hello dear friends, I hope you are all keeping well and looking forward to the festivities to come...
I have finally arrived home to see my family in North wales, UK for the festive period and to relax a little and I couldnt be happier.
In this video, I wanted to share just a little about me and my family and why this time of year is especially precious and nostalgic to me.
I will also show you one of my favourite bakes, a Jewish honey cake called ''Lekach'' as well as a few other little recipes I will prepare at home.
I want to also thank you all for your beautiful and encouraging comments on my videos so far as Im very new to video making and editing and Im trying my best to learn and improve. However, I deeply enjoy the process of documenting aspects of what brings me happiness and sharing them here with you, so I wanted to say thank you :))

For the Elderberry Tincture:
-Fill 1/4 of a jar or container with dried elderberries and cover to the top with a high quality vodka. If you are using a jar with a metal lid, make sure to place a waxed sheet of paper between the lid and the alcohol as it will erode the metal.
Store this in a cool, dark place for around 4 - 6 weeks and its ready for use.
For the Cranberry drink:
-I use a pack of 300g frozen berries and 80g sugar (or to your own taste).
Simply put everything into a pan, cover completely with boiling water and simmer on medium heat for an extra 15- 20 mins or so until the liquid turns a nice red colour.
For the cake, youll need:
-1tbs groud flaxseeds with 2 1/2 tbs water (mixed) instead of using eggs, or you can use eggs if youre not vegan.
-1 1/3 cups spelt flour
-1/2 tbs baking powder
-1tsp baking soda
-1/2 tbs cinnamon
1/4 tsp ground ginger
-1/4 tsp groud cloves or allspice
-1/2 cup dark agave syrup or honey
-1/4 cup rapeseed oil
-1 tsp vanilla extract
-50ml well brewed black tea
-some sliced almonds for the topping (optional)
Method:
-Pre heat oven to 180 C
-Put all dry ingredients into a bowl and mix together.
-Make a well in the middle and add in all the wet ingredients including the tea and the flaxseed and water mixture.
-Mix altogether and pour into a lined tin.
-Bake for around 40mins or until you can insert a knife into the cake and it comes out clean.
Add some almonds on top if youd like and thats it! Enjoy!
