I have a third video coming out with some modifications. The first modification is replacing the mesh with a stainless steel mash. Apparently over time the galvanize will break down an affect the food. We do not want that switching over to stainless steel mesh. Thanks for watching.

Nice work. If I can make some suggestions. First make yourself a grill surface using expanded metal that you can lift the whole hog out of the smoker so it doesn’t come apart on you. Second don’t puncture the skin when injecting. Inject from the meat side only. The skin needs to get salted & kept dry so it will crisp up on you. With the fire the heat should be on the 4 corners which is where the thickest part of the pig is at. If you put heat in the center then your ribs & belly will dry out by the time the shoulders are done. Keep that temp probe in the meat so you don’t go over & dry it out. Cook it skin side down so it holds in all that marinade.

Those are great tips! I will be making a couple modifications soon. The first modification I will be doing is replacing the galvanized mesh. And installing stainless steel mesh. I learn from another comment that overtime the galvanized mesh after multiple uses starts to break down. I appreciate your comment. Stay tuned for part 3 of my cinder block smoker. This was a great video and learned a lot from this. We just cooked a pig for New Year’s Eve in a Caja China. It came out delicious. Seasoning the pig to the best rapper ever! Big Pun…. Yeahhh Baby!!! 🇵🇷

I'm glad you enjoyed my video. I plan on making a modification and eliminating the galvenice mash. Replacing it with all metal mesh. The next pig I do, I want to eliminate the aluminum foil so I can get the skin nice and crispy. Stay tuned because I will film and upload that video. Thanks for watching.

A couple questions for ya. How big was ur pig? I built a pit kinda like urs but mostly in the ground as it doubles as a firepit.

I don't recall taking measurements. But if I were to guess, it was anywhere around 36 or 40 inches long. Butchers typically don't sell by the length or how big. They sell by the pound. This pig was sold to me at 35 pounds. But it weighed a little over 38 pounds. Thanks for watching 👍
