I have this same grill and I love the set up with the Pellet smoker on one side and the propane on the other. The issue I am having with mine is that the convection fan turns off once temps get around 240 and does not come back on until I turn the grill off and it begins the cool down process. Any advice you can offer would greatly be appreciated!

If you want to try a really low and slow method that’s been fool proof for me check out Meat Church BBQ Weekday brisket recipe. I do mine approx 19 hours mostly from dinner to the next afternoon. wrap usually works out to be around 9 in the morning. After a few tests I decided foil provides much more juicy meat over butcher paper. Check it out I think you will like the method. Literally no work especially if you can control temp via WiFi.

I have the kc combo. The temp is off by at least 20 degrees every cook, it doesnt produce much smoke and all the dust it kicks up bums me out. And it was crazy expensive. Worth it for the flat top though 😁

Here’s an idea for a future video: cook a SELECT piece of meat. With high inflation we like hunting for those deals. Show us how to get a juicy and tender brisket using the cheapest meat.

I think my controller is off by 60 deg....I set mine at 250 and my 13 pound brisket was done in 6 hours.

14 hours is always worth it. Good cook bro. I did a 16 pounder for Super Bowl in the offset. Have to get up every couple of hours ugh. I like that smoker!

I bought a kc combo. My first smoker. I'm not ready to smoke on it yet because the burn pot kicks up so much saw dust. I'm not sure if it is the pellets or operator error. And the temperature is inaccurate and unevenly distributed.

Is it kicking up sawdust or ash? If it’s sawdust, that’s an issue with the pellets. If it’s ash, that’s normal if it’s just a little bit. All smokers have temperature variations too. The temps will go up and down throughout the cook. I have a Pit Boss that does this and I have a high end offset smoker that does this as well.

Personally I leave as much fat as I can. But if I do cut it I render it to use the tallow for steaks or eggs.

What temperature was it when you cook the brisket. It's 6 degrees, wind chill -10 here in Kansas City

You can do it fat cap up or down... there is really no right way of doing it. I chose fat cap down because the burn pot is just a few inches under the grate and I use the fat as an insulator from the heat. Others put the fat cap up to baste the meat while it cooks. You should do it the way that works for you.

15 years ago brisket was cheap cheap cheap just like skirt and flank steak. Now all those fetch a premium. Crazy what demand does to pricing.

@@WeekendWarriorBBQ Its exactly like what Barret Jackson and Mecum did to 60's and 70's cars. When in my early 20's you could buy a decent Chevelle,Camaro,Nova or a Mopar for 7 to 10 grand. Now everyone with one thinks they got a gold mine and people will pay based on what they see on TV. Restaurants and BBq competitions televised did the same for what was then cheaper cuts of meat.

Good tutorial, with good pointers especially about the ball of foil above the burn pot and the hotter area being on the left side of the smoker. Did the foil work out as well as you thought it might or would you make different adjustments?

Thank you, Charles. I don’t think I would do anything differently on this cook. The foil ball prevented the bottom from getting crispy and I think that is a nice, low cost solution.

Yeah I took out the broil plate and wrapped it in foil and put it back in.

Considering getting it. Does it actually have smoke in it? It doesn’t seem to produce smoke.

@@alekseychayka3580 yes it produces great smoke and flavor. You can regulate the smoke level by opening and closing the chimney cap. You can also regulate the depth of the smoke in your meat by turning down the temp for low, long smoking. Great grill and we love the top also. We would buy it again, no disappointments!

Does the app actually work for this grill? I've read a lot of reviews that say that it doesn't work. Have you actually been able to control your grill from the app?

The app works fine. There is a couple second delay from when you change the temp on the app but no big deal. The only complaint I have is that it is bluetooth which has very limited range. WiFi would have been way better.

Mike, Can you set an alarm to signal when your meat temp reaches a certain temperature, say 160 in this case to be notified to wrap

Two things Do you find the temp probes on this model to be accurate? I have had some trouble with mine. Also from what I have read and been told by pitboss putting the foil on the broiler plate will void your warranty. Did you notice enough of a difference in the heat dispersion to risk that?
