It's not hard. Lump charcoal with some of whatever hard or fruit wood you like. You can even buy a regular BBQ grill and put the charcoals on one side and the meat on the other for the offset. Smoke it for 3 hours on the BBQ, then wrap and put in the oven for 3 more. Same result. With pork ribs, I do 2 + 2.

Yall are referring to Les as if he invented f'n smoked oxtails. In Louisiana we have been eating them this way for years. Im 51, I remember eating these as a kid for 4th of July. Along with all the other bbq fixings. Les is just an imitator too!!

After cooking have a cup of tea water , coffee or Italian soda! Sit and start a movie twenty minutes or half hour . Or make your sides masked , baked or potato salad Mac & cheese or risotto. Spinach & Swiss chard or other greens collards. Or green beans ! Cabbage bok choy! Create!

Grilled some yesterday. Only difference was I cut up some onions, shallots, garlic, and placed them at the bottom of the pan, then placed the oxtails on top, covered them up and put back on the grill for about 4 more hours.
