SMOKED SALMON Pasta Carbonara Recipe | Bart's Fish Tales

Hi guys! Today a twist on a classic pasta dish, I’m going to make a seafood spaghetti carbonara with smoked wild sockeye salmon! The salmon I’m using today is caught by my friend Brian, who lives at Cook Inlet in Alaska. What’s so special about this salmon is its extraordinary red colour, that is because this sockeye salmon only eats sea vegetation, but there is a lot of tiny shrimp living on these kind of vegetation. The tiny shrimp is what cause this incredible red colour of this great fish. A great replacement for your regular pasta carbonara!

Bart, I made this dish tonight. A combination of alio olio pepperonchino and your salmon carbonara (or piscara). It is the best pasta I've eaten. And when the missus and I were zapping across TV channels, I nearly choked on a large spoonful of velvety spaghetti with the umami flavors of egg, salmon and garlic - when I saw you on 24kitchen. My hero! What a coincidence!

Looks easy, looks like there are some techniques to follow to get it right though, looking at the end dish , it looks oh so worth it. That salmon has a fantastic colour and texture. Thank You Bart.

If you add an additional egg yolk you can leave the cream out. It will be nearly as creamy then :)

The stuff that makes farm-raised salmon pink are astaxanthin and canthaxanthin (those are carotenoids, like in carrots). This has led to a strange invention called the 'zalmforel' which is basically a normal trout fed with carotenoids so it resembles salmon better (perhaps to make it more saleable).

If you use leftovers of baked salmon it'll obviously be subtler. Cook it in the pan with the onions, it'll be more flavoursome ;)

I normally make salmon pasta with cream (and vodka when I have it haha), should try to add an egg. Lovely twist on a traditional recipe which is less easy to make then many people think!

Bart's Fish Tales it's often scorned as '80s style' in Italy, but it definitely works (particularly with flaked smoked/baked salmon). I also put pepper (black or pink) but I put pepper pretty much everywhere haha. x

I just did it, to avoid having scrambled eggs on my pasta i took out the pasta from the pan put it on my plate and thats where i poured the eggs sauce. The pasta is still in medium heat which cooks the eggs on it. is this advisable to do? hehe

Hey Bart ! Why don't you cook your smoked salmon a little before even with a sauce, not here since it's eggs based) rather than throw it in the pan and mix it at the very end ? Love from France ;)

+Kevin Cochet Because the salmon is already "cooked", because it was smoked. Frying it in the pan on forehand will lose it's lovely texture.

+Live your style You have added the eggs to the pasta when it was still too hot. The trick is to take the pasta from the heat and have it cooled down just a bit. Then add the eggs and stir gently until you have reached a nice smooth sauce. Don't give up, give it another try...

Just a Question... Without adding a few tablespoons of pasta water, aren't you in a position where the egg sauce has to be either warm and uncooked or cooked and curdled?... I know the cream won't substitute for the starch water so I'm just confused... You definitely need Pasta water for Carbonara don't you?

I've often heard that fish / seafood and cheese do not go well together. (Gordon Ramsay uses bread crums on his pasta with sardines, no cheese) Do you know what that is all about? Your recipe looks very simple, I am definately going to give it a try. (including the parmazan cheese)

+Rimpelmans There is not a strict 'rule' for using or not using cheese with seafood. I agree it is not always the best combination but especially in this case it goes quite good with the pasta, cream and smoked fish.

Salmon is a bit of a different one, having quite a strong flavour -in pasta with sardines there's no cheese for two reasons, sardines don't go along with cheese and where the recipe is originally from (Sicily) poor people couldn't afford pecorino cheese (Parmesan is from North of Italy) so they used breadcrumbs instead (my favourite pasta is actually pasta ca muddica: anchovies, breadcrumbs and wild fennel, a feast for tastebuds).

I really dont like seeing pasta be drained so thoroughly so that it's dry. The pasta water is absolutely vital in making your sauce a nice consistency, because of the starch that's in it. The idea of completely dry, now-sticky pasta being tossed with our sauce really turns me off.

sorry but no. the fish would break apart and turn into nothing slicing it like that and tossing it. chives are a garnish not an ingredient so thats knackered and salmon is a replacement for pork? this is nonsense
