Only thing I smoke is weed! Fish gets an oil bath or I cannot eat it in most cases. Hahaha! 😂 However grilled Snook or Flounder with lemon and veggies in foil works the trick for me. Looking forward to seeing how this turns out. Watching now!

Yerh man the smoker is up side down. The holes are to give the meths oxygen. Everything else you done look good. Success in the end.. 👏Oily fish like mullet, kahwai, eel, snapper go real well in the smokers. You can just lite a little fire with some sticks if you don't have meths and sit the smoker over the coals.

if you add s drop or two of water to the meths it stops sooting, and I think what you are doing in called a 'glazing' also, fingers where made before forks ;)

They make it almost impossible to stop by Palmyra with the grey water systems required to visit. No small boat has room for such a system

Hello from Waikato New Zealand. You had the smoker upside down. The holes are air holes for the flame. Next time flip it around and use half the amount of wood chips. It will burn a lot hotter and smoke more =)

Hey guys my pop used to make the very same smoker You have it upside down The holes are there to allow airflow for the metho to burn and at the same time protect from the wind You want all the smoke contained in the box section without the holes Will be a whole lot better next time👍

The trickiest part about using this type of smoker is preventing the fish juices from soaking the wood chips which prevents them smouldering. You can try wrapping foil under the tray you lay the fillets on

@@SailorJames Yes, and then spreading the wood chips on top of the foil. What I meant was if you wrap some foil under the racks you place the fish on, the juices will collect in that, rather than drip onto the wood chips underneath. The smoke should still get around the outside of the foil
