Great video! My biggest enemy during winter smoking is the wind! It really kills my game sometimes when using my offset. Other than that, no bigger issues even though temperature drops to -15C
@@kevinc3673 hell yeah! I've deep fried ours for the past couple years but it's such a nightmare to deal with the aftermath, and the new house we bought has an oven that is a bit too small to do our usual turkey. So the smoker it is!
Good information, I know a lot of people ask about it. I haven’t had any problems, just a bit more fuel consumption and some small adjustments. You’re dead on about wind though, that’s the enemy of bbqing. Have a great weekend Kevin!

Great instructional video! I smoke all year round. I usually shy away from smoking when I know it’s real windy outside. However, I have a covered two car carport which helps quite a bit in cold weather. I’m planning on buying some tarps to hang. The wind mostly comes from the north here in North Carolina. I plan to hang the tarps as a windbreak. TFS 😎
I use the burn down method on long cooks. Pile of cold charcoal on the bottom , usually kingsford long burn or professional or even lump and then dump my hot coals on top . From my experience it does work and I find I mess less with my fire box unless I'm adding wood for the smoking process.

@@aaronmartin1698 that’s where my dad was stationed back in the 70s. He took us to Alaska, in the early 90s and I’ve been back 6 times since. Amazing place!

Everyone in our Facebook group likes B&B best for their charcoal that they can typically buy locally at Ace or a hardware shop. Online I’ve order Fogo and really like that, it burned hotter than Cowboy. This Rockwood is good, I’ll get it over Cowboy at the store. One I’m died to buy online that I’ve heard good reviews on is Jealous Devil. From the reviews I’ve seen online Jealous Devil seems to be the favorite, but I burn so much charcoal I normally have to grab what I can at the store and I’m cheap so it’s hard for me to drop $80 bucks on charcoal Online order. Do you have an experience with electric temperature controls for the vents. Would be nice to see a video with that. Explaining fuel consumption and temperature control.
@@ifalcon101 I’ll have to look into that, I’ve only ever seen it for Ceramic style cookers and Weber. I’ve personally never seen one for an offset, unless the weber one is interchangeable and I just never realized it.

What would u use to add fuel? That lump charcoal will you just throw it on the fire and lift the fire box till it burns clean or put it in the chimney and lite it
I would just add it in, normally its less than a few minutes of any troubling smoke. Most times its not that bad of smoke either, just a little bit heavier. If you are getting to an end of a bag of charcoal be mindful of the loose dust, that can cause some smoldering and bad smoke.
Kevin, can I take my baffle off from my smoker with hopes that this will increase temp? I understand that it will always be warmer near the firebox. Please advise..
Thanks for the tip! I'm going to have to go through a lot of restoration to get this baby back to prime shape, but since I have an OK Joe reverse flow sitting in my garage. Knowing myself, I'll probably continue to neglect this one and start up on the new one. Need to grab some avocado for the Ok Joe though!
