Lafayette, Louisiana here and this definitely is the way to do it. My grandmother had us cutting sacks of Okra all summer long. We put it in that big magnelite pot and put it in the oven to get the slime out then put it in ziplock bags in the freezer. We called that process canning the Okra.

I am more of your style with canned diced tomatoes, and Rotel adds the kick of the peppers you use. It's a rainy day and you have motivated me to cook okra gumbo today!
