湯種材料:
牛奶 135 毫升
高筋麵粉 27 克
麵糰材料:
高筋麵粉 385 克
鹽 5 克
白砂糖 40 克
速發乾酵母 7 克
牛奶 165 毫升
雞蛋 35 克
湯種 145 克
無鹽牛油/奶油 (軟化) 35 克
墨西哥皮材料:
無鹽牛油/奶油 (軟化) 42 克
糖粉 65 克
雞蛋 47 克 (大約為一隻雞蛋)
雲呢拿香油/香草精 2 克 (½ 茶匙)
低筋麵粉 55 克
Water Roux (Tong Zhong Dough) Ingredients:
135 ml milk
27 grams bread flour
Bread Dough Ingredients:
385 grams bread flour
5 grams salt
40 grams white granulated sugar
7 grams Instant dry yeast
165 ml milk
35 grams whisked egg (about one large egg)
145 grams water roux (Tong Zhong dough)
35 grams unsalted butter, softened
Topping Ingredients:
42 grams unsalted butter, softened
65 grams powdered sugar
47 grams egg (about one large egg)
2 grams (½ tsp) vanilla extract
55 grams cake flour

Thank you for another lovely recipe! I have made your pineapple buns a few times now and it never fails. :) For the Mexican bun, can I add instant coffee into the topping? How much coffee (in grams) should I add? Thanks! :)

請問可唔可以用水代替牛奶? 減糖又得唔得?

水可以代替牛奶. 減糖是可以的,減 10-15 克糖粉差唔多,再多減糖粉就怕麵包唔夠味了。

皮會淋淋地,只要再放入小焗爐焗一焗就可以去返皮乾身的效果
