Murán buns - leavened butter dough
Yeast:
100 ml lukewarm water
35 g of fresh yeast
1 teaspoon powdered sugar
3 spoons of flour
Dough:
450 g plain flour
250 g semi-coarse flour
330 ml of milk
3 spoons of granulated sugar
2 spoons of oil
1 whole egg
1 egg yolk
120 g of butter for spreading
1 teaspoon of vinegar, a pinch of baking soda, a pinch of baking powder
Yeast - make yeast from yeast, sugar, water and flour, set aside for 10 minutes.
Heat the milk, add sugar.
Add flour and salt to the leaven.
Beat the whole egg and yolk in lukewarm milk.
Pour milk and oil into the dough and mix.
Mix baking soda and baking powder in water, mix.
Add vinegar mixed in lukewarm water (1 tablespoon).
Mix the dough until smooth.
Leave to rise for 40 minutes.
Cottage cheese filling - mix 500 g of cottage cheese, 3 spoons of sugar, 1 vanilla.
Add 1 tablespoon of golden cob, cranberries and lemon zest.
Poppy filling - add vanilla, a spoonful of butter, 4 spoonfuls of sugar to the milk.
Boil, add ground poppy seeds, stir and set aside.
Roll out the leavened dough.
Grate the cold butter, fold the dough.
Cover for 20 minutes.
Repeat this 2 more times.
After rising, roll out the dough, cut into squares and fill with cottage cheese and poppy seed filling.
Cover the buns on the baking sheet, leave for approx. 30 minutes.
Brush with egg (mix 1 egg with 2 teaspoons of milk).
Bake at 200°C for 20-25 minutes.
After baking, brush with boiled water and sugar, sprinkle with powdered sugar.
