Today is the hottest day of the year here in Humboldt County in Northern California. But “hot” is a relative term because here on the coast, the high is forecast to only be 74°F. Mid 70’s are ideal temperatures for a day at the beach, in my opinion. So today we are heading to Moonstone Beach. Moonstone is a small beach just south of Trinidad.
Today was filled with great views, great coffee and food too. After enjoying a simple sandwich for lunch, I had homemade pizza for dinner. Even without an oven, I have found an easy way to make pizza here in my van on my stove. The pizza turned out great and was one of the best so far.

My name is Scott and in 2015, I bought a Ram ProMaster City to live in. Even though I didn’t know much about RV’s and campervans, I set about building the van out as a minivan camper. And in April of 2016, I moved into my minivan full time.
