This video provides a brief comparison of video stabilization techniques. This compares the normal in-camera optical image stabilization ("Standard") with the more aggressive "Active" setting, and then compared with the Movie Edit Add-on app that currently works with the Sony RX-0 II, RX100 VII, and the ZV-1.

cool beard lol also in the movie edit app even though it crops in you can change the aspect ratio to give you more depth of field

The first one Standard Stabilization is terrible, its useless. The 2nd one Active is much better however the video is cropped in way too much. The final solution, your 3rd method can use no stabilization while recording but run the video through the Movie Edit App and stabilize from there, however there is a big drawback, you can only export the video in 1080p and the overall video quality suffers.

I think you understand the tradeoffs pretty well! If none of these options suffice, then the next step is to get a gimbal designed for the RX100 series of cameras.
