🛒 Ingredients (4 people):
🔸 150 g stale bread (5,3 oz)
🔹 5 cloves of garlic
🔸 1 ham bone
🔹 1 tsp sweet or hot paprika (1 tsp)
🔸 30 ml of olive oil (2 tbsp)
🔹 4 eggs
🔸 1.5 l water (6 cups)
🍳 Directions:
1️⃣ Cut the bread into thin slices. Peel the garlic cloves and cut them into thin slices, but not too thin. Try, as much as possible, that they have the same thickness.
2️⃣ In a pot, put the oil and the sliced garlic cloves. Cook over low heat until you see them start to brown. Add the bread and toast for a few minutes.
3️⃣ Make a hole in the center and add the paprika. Cook just a few seconds (so it doesn't burn) and pour the water. Add also the ham bone. Cover the pot, turn up the heat until it starts to boil. Lower the heat and cook for 30 minutes.
4️⃣ Remove excess fat if desired. Remove the ham bone and add any meat it may have to the broth in small pieces. Add salt to taste.
5️⃣ It is time to add the eggs. There are two ways and we like to combine them. One is to add a couple of eggs and mix with a wooden spoon so that they break up and form threads in the broth. The other is to add them whole, cover and let them set for 5 minutes. and our Sopa Castellana or garlic soup is ready!
👌 Notes:
This is a very humble dish in its origin, which did not have a ham bone in it. I like to put it in, as it gives it more flavor and does not make the dish more expensive. Some people enrich it by using chicken or beef broth and adding a few slices of ham (although as we have prepared it, it is very tasty).
