Today I’m going to share with you how to make the most delicious sopita de fideo con albóndigas, Mexican meatball and fideo soup! I You know you Mexican when it’s 110 degrees outside and you make soup lol, sopita is my go to specially when the kids are in summer vacation is easy, quick and super delicious! Everyone enjoys it and always ask for more. ingredients:
7 oz fideo (Vermicelli pasta)
2 russet potatoes;chopped
15 baby carrots;chopped
Handful of cilantro
For the broth:
4 roma tomatoes
1/4 white onion
2 garlic cloves
2 chile chipotles
1 tbsp chicken bouillon
1 sazón Goya seasoning or 1 tbsp tomato bouillon
1 tbsp tomato paste
1/2 tsp ground cumin
1/2 tsp black pepper
Salt
For the meatballs
1 lb ground beef I’m using 97/3
1/2 chopped white onion
Handful chopped cilantro
2 minced garlic cloves
2 chopped chipotle peppers(optional)
2 tsp smoked paprika or chipotle powder
2 tsp garlic salt
2 tsp oregano
2 tsp black pepper
1/2 tsp ground cumin
1/4 tsp salt
