Sorghum Roasted Sweet Potato Ice Cream Recipe
Welcome Friends! Welcome to another one in our ice cream recipe series. In the carrot ice cream recipe video I talked about sweet potato ice cream and how I've eaten it in both China and Japan, saw it in Korea as well so thought I'd give it a shot. I have no clue how they made it so
I'm just going to take one of our existing ice cream recipes and tweak a little bit and put in the sweet potato.
Ingredients:
300g (about 1) sweet potato, chopped
30 mL (2 Tbsp) pure sorghum syrup
500 mL (2 cups) 35% whipping / heavy cream
30 mL (2 Tbsp) vinegar (apple cider or similar)
75 mL (1/3 cup) milk
1 - 300 mL can sweetened condensed milk
Method:
Preheat oven to 240ºC (475ºF).
Chop the sweet potato and toss with the sorghum syrup to coat.
Roast in a single layer on a sheet tray until the sweet potato has lost most of the water and is starting to caramelise.
In a large mixing jug lightly whisk together the vinegar and cream.
When the sweet potato is roasted, blend with the milk until smooth, and whisk into the cream mixture.
Whisk in the sweetened condensed milk, and then freeze according to your ice cream makers instructions.

As a lover of sweet potatoes I have enjoyed your sweet potato pie and sweet potato ice cream videos. I would suggest that you try making them with the Garnet variety of sweet potato if you can find it. The most common sweet potato in grocery stores is the less flavorful but larger and easier to sell Beauregard variety. If the grower has cured them properly, the red Garnet variety is much better tasting when roasted.

My wife has made a couple of variations of this and OMG possibly the best ice cream ever. My favorite variant had little BB sized chunks of butter floating all through it.

Oooo sweet potatoes and sorghum are very prevalent here in North Carolina we often have roasted sweet potatoes w/sorghum and cinnamon when the weather gets a little cooler. Can't wait to try this. Thanks Glen.

I live in Louisiana here we eat a lot of sweet potatoes. So I will be trying this. What about a little cinnamon and toasted pecans, tourched marshmallow fluff topping? Love your chanel. ✌❤

Sweet potato pie ice cream custard would be awesome. Pumpkin spice gets all the attention while sweet potato and butternut squash get left behind. (Butternut squash makes really good pie and it's a lovely color.)

The kūmara, the sweet potato varietal Māori imported into New Zealand from South America long before the Europeans arrived, has a thicker skin than the sweet potatoes you’re using, Glen. Pretty sure they’d need to be peeled first. On the other hand, Mānuka honey, though expensive, has an intense, almost smokey sweet flavour that would probably be gorgeous here. Congratulations, you’ve just invented a new New Zealand national dish!

@@dacheet8174 I've never had ube ice-cream or even heard of it before. I did an on-line search and found lots of recipes for ube ice-cream as well as recipes using sweet potatoes, but none using the Hawaiian sweet potato. I had never even thought of using sweet potatoes, any type, to make ice-cream before. So I was quite intrigued by Glen's ice-cream recipe. I looked a while back for Japanese sweet potatoes but was unable to find them in my area. I did find purple new potatoes, but those won't work for ice-cream. I had a discount code as well as free shipping, so I ordered the purple Hawaiian sweet potatoes on-line. They are delicious, plain. I am sure if I search I will find lots of different preparations I can try. But, for now, I am sticking with the sweet potato ice-cream recipe ideas. I cooked some potatoes yesterday, baked, boiled, and steamed, so that I can see which method helps the potato release the most sugar (I would like to add as little sugar as possible). I am curious, are the Japanese variety fibrous like traditional sweet potatoes?--the Hawaiian are not. Thank you so much for introducing me to ube ice-cream, I can't wait to try it out :) p.s. I lived in Japan and South Korea and they are sweet potatoes are vastly different from ours! They are so delicious that I put them in a class of their own. I have had pumpkin ice cream in the US and it is quite tasty but usually has a cinnamon swirl or something to make it very pumpkin pie like. It's not an ice cream I seek out. I think that the Japanese and South Korean sweet potatoes are just so different from ours.

Bagged milk and jug was tried in Australia about 30 years ago (identical to what you showed). Company couldn't shift from csrtons behaviour and it died. Much easier for kids and elderly than cartons.

I have three jars of sorghum from Kentucky. I will use the sorghum to make this ice cream. I just had some drizzled over my Greek yogurt. BTW, did you peel your sweet potato before roasting it?

I like well-made sorghum syrup better than cane molasses: not as much sulfur flavor and it is both complex and subtle. Is it useful to keep the skins on the sweet potato or is that to just hold on to more nutrients and fiber?

if you based how much is a third of a cup off of the measurements on the blender, you added less then a third of a cup, unless you accounted for displacement

Next time, you should try adding a few sticks of cinnamon and star anise to the cream and let that sit in there to really enhance the flavor of the ice cream

My go to method for roasting sweet potatoes is just to stab them with a fork and roast at 350°F until thoroughly softened, 45-90 minutes, depending on the size and firmness of your sweet potatoes. Let them rest just until you can barely hold them, then halve them and scoop out the softened flesh.

Id make it like a yam bake and do a brown sugar maple glaze with marshmallow and puree it in the milk maybe leave the marshmallows out..... Edit just got to the end lol maybe fold burnt marshmallows in or something

What's kept you going for this long? This question started because I was going to tell you to please never stop making videos and don't be discouraged if every video you make isn't a viral sensation, but looking at your channels history you've been doing this for over a decade and only in the last year did you first start to get views over 10k. I know you mentioned creating adverts in the past, is this just a pure passion project? You built an entire studio for this channel alone? I really don't want to sound like I'm being rude, I'm just very impressed with your work ethic. This is the first and only comment ill ever post so I might as well add that I love how both of you are so relaxed in front of the camera and you couldn't care less what anyone thinks, you do it your way. I love it. Now it seems completely unnecessary to say but don't stop. You're so close to doing collabs with babish and bon appetite. I can't wait to see your views inevitably skyrocket with every video, and every single one will be well earned. Love the channel. Never cooked in my life.

Were the sweet potatoes peeled? I couldn’t tell. If you make an air hole in the can of sweetened condensed milk you could low heat simmer the can in a pot of water for 25 minutes for a light caramel flavor.

Would orange juice concentrate work, or just burn? I think cinnamon and chopped pecans would be good! Have you done tomato ice cream? There was a shop in Seattle that did really unique flavours. And I thumbs down the marshmallows, don't like them on sweet potato casserole either, although obviously someone does. I'm a cilantro tastes like soap sensitive taster, and roasted marshmallows taste like burnt corn to me.
