Ingredients : 2 Pickled Gherkins
1 Red Onion
Lemon juice of half a lemon
Fresh Parsley
2 Egg Yolks
300ml Vegetable Oil
50g Capers in brine
Fresh Tarragon ( dried or in vinegar )
1tbsp Mustard
1tsp Horseradish cream
Salt , Black Pepper

Add two eggs yolks in a bowl , a pinch of salt , mustard and mix everything using a whisk while gradually pouring in the oil . Then chop the onion into small cubes , the gherkins , capers , tarragon, parsley ana add everything into the bowl with the mayo .
Squeeze in half a lemon , and add creamed horseradish , salt and pepper ( based of taste ) . Mix everything really well and the tartar sauce is ready . Serve with crispy chicken , fries, fish .
